Ingredients

There is something special about discovering a food that is simple, wholesome, and full of flavor—and that is exactly how I felt when I discovered Norwegian Baked LLC from Brooklyn, New York.

Norwegian Baked takes a traditional Norwegian staple called Knekkebrød, or Norwegian crispbread, and brings it to American tables with a wonderful combination of traditional recipes, organic ingredients, whole grains, seeds, and creative flavors.

What I really love about crispbread like this is that it isn't just another cracker. It has a heartier texture, plenty of crunch, and enough flavor to stand on its own while also giving you a delicious base for toppings. Norwegian Baked describes its crispbread as naturally plant-based, fiber-rich, and made with certified organic whole grains and seeds.

And the story behind the company makes these crispbreads even more special.

The Story Behind Norwegian Baked




Norwegian Baked was founded in 2016 by Hedvig Bourbon, who was inspired by the crispbread she enjoyed while visiting family in Norway. After tasting her aunt's homemade crispbread, Hedvig realized that the United States didn't quite have the same kind of traditional Norwegian crispbread she remembered.

You get that familiar crunchy Norwegian crispbread texture, but then the rosemary comes through with its earthy, aromatic flavor.

It's a wonderful combination.

I could easily see myself grabbing a piece of this in the afternoon with a cup of tea, but it is also sophisticated enough to serve at a party.

Since the Rosemary & Lemon Crispbread has such a fresh, herbal flavor, I wanted to create a recipe that would let that flavor shine.

This recipe is easy enough for lunch but pretty enough to serve as an appetizer.

Ingredients

  • 1 package of Norwegian Baked Rosemary & Lemon Crispbread

  • 2 cups cooked chicken, shredded or chopped

  • 1/3 cup mayonnaise

  • 2 tablespoons Greek yogurt

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon lemon zest

  • 1 teaspoon honey

  • 1 tablespoon finely chopped fresh parsley

  • 1/4 teaspoon garlic powder

  • Salt and black pepper, to taste

  • 1/3 cup finely chopped celery

  • 2 tablespoons finely chopped red onion

  • Fresh rosemary, optional, for garnish

  • Thin lemon slices, optional

Directions

  1. In a medium bowl, combine the mayonnaise, Greek yogurt, lemon juice, lemon zest, honey, parsley, and garlic powder.

  2. Add the chopped chicken, celery, and red onion.

  3. Stir everything together until the chicken is nicely coated.

  4. Season with salt and black pepper to taste.

There are hot sauces that are simply hot—and then there are hot sauces that actually make you want to keep eating.

That is what caught my attention about Tennessee Bob’s Hot Sauces. These sauces aren't just about turning up the heat. They are about creating sauces with their own personalities, flavors, textures, and, of course, their own characters!

And when you look at the bottles, you can't help but smile. Each one features one of Tennessee Bob's colorful Pepper People, and each Pepper Person has a story. What started as stories about an Ecuadorian farm eventually became part of the identity of the hot sauce company.

So let's take a little trip to El Rancho del Fuego and meet some of these fiery characters!


Meet Tennessee Bob.




Before we get into the sauces, I think it is important to talk about the man behind them.

Robert D. Vasvary, better known as Tennessee Bob, is a Navy veteran, electrical engineering graduate, blues harmonica player, and author of the Pepper People books. He lives in Boca Raton, Florida, with his wife Nicolina, known as Lady Fingers, and their son Ethan, known as Dragon's Breath. The family also spends time in Quito, Ecuador, Nicolina's native home.

Tennessee Bob's sauces are made in small batches using locally sourced peppers and individual spice blends. What makes the company especially unique is that the sauces and the stories developed together.

Every bottle features a Pepper Person, and those characters have their own stories in Tennessee Bob's books. Bob even appears at South Florida markets in character, serving samples and sharing the stories behind the sauces.

I absolutely love that idea.

Instead of picking up a bottle of hot sauce and seeing just another pepper graphic, you get a little character with a personality staring back at you.

It makes the bottles fun to display—and even more fun to talk about.


The Cute Pepper People




One of the things that makes Tennessee Bob's bottles stand out is the artwork.

The characters are colorful, quirky, and full of personality. And they aren't random cartoon peppers. They actually represent characters from the Pepper People stories.

You've got characters such as Rasta, Happy Habanero, Ma, Pablo Poblano, Jalapeño Jack, Jim Grim, and Tennessee Bob himself.

For me, that is part of the charm.

Let's start with one of the most flavorful sauces in the collection: Rasta Sauce.

Rasta is represented by a Scotch Bonnet pepper, and Tennessee Bob describes him as one cool pepper who can still burn you if you aren't careful. The character's story has Jamaican roots, which fits perfectly with the island-inspired sauce.

The sauce itself combines mango, Scotch Bonnet peppers, habaneros, honey, brown sugar, allspice, ginger, and apple cider vinegar.

Taste

This is a wonderful sweet-and-hot combination.

You get tropical mango sweetness first, followed by warm allspice and ginger, and then the Scotch Bonnet and habanero heat comes along.

It has that wonderful jerk-inspired flavor that makes you immediately start thinking about grilled meats.

Texture

Rasta Sauce has a smooth, pourable consistency that makes it easy to drizzle over food or use as a glaze.

What It Pairs With

Tennessee Bob recommends it with jerk chicken, steak or chicken kabobs, pulled pork, mango chutney, and even cream cheese on a bagel.

This recipe is one I would definitely make when I want something sweet, spicy, and packed with flavor.

The mango and honey in the Rasta Sauce work beautifully with pork, while the Scotch Bonnet and habanero peppers provide the heat.

Ingredients

  • 4 boneless or bone-in pork chops

  • 1/2 cup Tennessee Bob's Rasta Sauce

  • 1 tablespoon honey

  • 1 tablespoon brown sugar

  • 1 tablespoon fresh lime juice

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon ground ginger

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Fresh cilantro, optional

  • Lime wedges, for serving

Directions

  1. Pat the pork chops dry and season both sides with salt, pepper, smoked paprika, and ground ginger.

  2. In a small bowl, combine the Rasta Sauce, honey, brown sugar, lime juice, and garlic.

  3. Heat the olive oil in a large skillet over medium-high heat.

  4. Add the pork chops and sear for about 3–4 minutes per side, depending on thickness.

  5. Reduce the heat to medium-low and pour the Rasta mixture over the pork.

Taste

This sauce has a tangy flavor with a wonderful hickory-smoky character.

It has enough heat to wake up your taste buds without completely taking over the meal.

Texture

It has a smooth, pourable hot-sauce consistency, making it easy to drizzle over food or incorporate into recipes.

What It Pairs With

This one would be fantastic on:

The flavor centers around habanero with paprika, onion, and chili powder. Bob describes it as having less vinegar flavor and a richer spice character.

Taste

The habanero flavor comes through clearly, giving it that fruity pepper character followed by a lingering heat.

The paprika and spice blend give it more depth than a simple vinegar-based hot sauce.

Texture

It has the smooth, easy-to-pour consistency I like in an everyday hot sauce.

Dragon's Breath is inspired by Tennessee Bob's son Ethan, who is known as Dragon's Breath in the Pepper People world.

It combines Dragon's Breath peppers with red and rocoto peppers, apple cider vinegar, guava paste, maple syrup, paprika, chili powder, garlic, thyme, cumin, and other spices.

Taste

What I find especially interesting is that this isn't simply a “burn your face off” sauce.

It has sweet, smoky, tropical notes, with guava and maple syrup helping balance the tremendous pepper heat.

Texture

The sauce has a pourable consistency that works well for drizzling or incorporating into barbecue sauces and marinades.

What It Pairs With

This is the bottle for serious heat lovers.
