Salumi Chicago Review



I am always interested, when I open my delivery boxes. I never know what products I have the honor of trying out, and writing about. Today was no exception. From Chicago IL., I received a product that I have never heard of, let alone ate. So I was eager to get to learn more about it from the company that sent it, and figure out how to use it.


The company Salumi Chicago sent over some of their "Nduja". I will get into what it is in a few minutes, but first want to let you know some facts about the company.

Greg Laketek, the owner of Salumi Chicago, left his day job and booked a one-way ticket to Parma, Italy, the birthplace of Prosciutto, hoping to study under the finest salumiere in the country. Through opportunity, he was able to understand the nuances of the secured secrets of Italian Salumi. Greg, using outstanding quality herbs, meats and curing techniques ingrained in the old world, SalumiChicago beautifully adds another degree of Italian premium meat to the US.


Now let me explain, just want Salumi Chicago "Nduja" is. It is a spreadable calabrian chili pepper salami. Usually this type of salami is spicy, but always a spreadable pork. The "Nduja", is similar to sobrassada, and can be spread on many different types of food, or used in many different types of recipes you cook such as pasta sauce.


So I decided, that tonight will be Italian theme dinner for us.


First up, I used the spreadable salami on a toasted crustini. The texture and the way it spread was like butter. It was spicy, tangy, and all out delicious. You can think of it as a very versatile salami for sure. Just adding a dollop delivered a ton of flavor. The ingredients we're natural, with pork, chili peppers, red wine, and trapani sea salt. What's nice is you do not need to cook the spreadable salami before eating it. It can be served cold on toast as I did, or added to a meal you are going to cook. This is truly a Italian made product, after all it is a specialty in Calabria. And since there it is often mixed into a pasta sauce, that is just what I decided to do.


For the main course, I made some shrimp pasta, with the added ingredient from Salumi Chicago "Nduja". The "Nduja", gave my home made sauce a very rich red color. The taste of the sauce was warm, and intense, and filled with so much flavor. You really felt as if you we're eating at a little café in Calabria, Italy. The "Nduja", gave the sauce meatiness as if I had made any other type of meat sauce for pasta. The sauce did not involve any hard prep work at all. I used only the "Nduja", for all the flavor, and nothing else. The sauce was a huge flavor payoff, that the family really enjoyed. There was no meat to brown, just placed dollops of the "Nduja", into the sauce and cooked it for twenty minutes, on a low heat. The high fat content of the "Nduja", is what allowed it to emulsify and meld quickly into my home made pasta sauce. The pasta I used was ziti so that the sauce could flow in and be held there when taking a bite. Also on top was some grated pecorino Romano cheese, and together all the flavors melded well.


With so much left, I will be able to save it in the fridge, and create some more dishes later in the week.


If you are a lover of heat, you will love "Nduja", a salami that you can immerse yourself into. This spicy spreadable salami will provide a meatiness and tasty funk to any dish you wish to try it with. It is very versatile, and the flavors leave you drooling for more.


 It's so much fun having theme night dinners. And if you are looking to taste dishes like they make the Calabrian way, this "Ndjua", is the product to use.
