Sweet Onion Jam


Ingredients

3 Tbsp. Butter
2 large Sweet Onions, thinly sliced
2 Tbsp. Sugar
3 Tbsp. Raspberry Preserves
2 Tbsp. Raspberry Vinegar
2/3 cup Dry Red Wine
Salt and Pepper, to taste

Melt the butter and sauté the onions over medium heat for 30 minutes. Add the sugar, the preserve, the vinegar and the wine. Cook for 20 minutes or until the thickness of the jam is achieved. Season to taste with salt and pepper.
