Stephanie's (my daughter's) pineapple fluff dessert


It is no secret that my daughter Stephanie can not only cook, but can bake. You don't find many that have both talents. Below is her recipe for pineapple fluff that's no secret!

4 ounces cream cheese, room temperature
1/2 cup butter, room temperature
2 cups confectioners sugar
20 ounce can crushed pineapple, drained
8 ounces whipped topping, such as cool whip
2 cups mini marshmallows
1 cup maraschino cherries drained and chopped

In a large bowl and with a hand-held blender, mix the cream cheese and butter until creamy. Add the sugar to 2 cups of the confectioners and stir again until the mixture is fully combined.

Add the (cool whip), diced pineapple, mini marshmallows and cherries. Using a spatula, blend softly before completely incorporated. Refrigerate for at least two hours, ideally overnight.

The prep time is only 10 minutes, after that chilling time, you have a yummy dessert.
