Italian Chicken Bake

 


This is one of my favorite family simple evening meals! With only four ingredients and rich, delectable aromas, the Italian Chicken Bake comes together again in minutes!

 

INGREDIENTS

3-4 Boneless Skinless Chicken Breasts

4-6 Tablespoons Prepared Pesto

1-2 Roma Tomatoes

1 Cup Mozzarella Cheese, grated

 

Clip the chicken and arrange it in a single layer in a glass baking dish.

On top of each chicken breast, spread 1-2 tablespoons pesto.

Cut the roma tomatoes into 1/2" thick slices and place two slices on top of each chicken breast.

 

Spread the cheese on top of the chicken breasts.

Bake for 30-40 minutes, or until the chicken is done and the juices run clear, at 400°F.

Serve on top of a bed of rice or a plate of spaghetti.
