Black Rice

 


Black rice is one of a few superfoods. The rice has a really distinctive appearance as it cooks up to a rich purple color. The rice works well with almost any meal as a healthful side dish. I like to serve it with salmon and fresh vegetables.

 

Ingredients

2 tablespoons butter

1 cup black rice

¼ cup diced onion

¼ cup slivered almonds

1¾ cups water

1 cube chicken bouillon

 

In a saucepan over medium heat, melt the butter. Cook and stir for 5 to 10 minutes, or until the black rice, onion, and almonds are gently toasted. Take the water and bouillon cube to a boil. Reduce heat to low, cover, and simmer for 25 to 30 minutes, or until the rice is cooked and the liquid has been absorbed.
