Barbecue Prawns with Lime

 


These grilled prawns are a crowd pleaser and will be whenever you serve them.

 

1 red chili, chopped finely

 1 Tbsp soy sauce

 1 Tbsp grated fresh ginger

 2 cloves garlic, crushed

 Zest and juice of 1 lemon

 1 Tbsp brown sugar

 Salt and pepper

 24 large raw prawns, tails on

 8 bamboo skewers, soaked in cold water for 30 minutes

 Lemon or lime wedges to serve

 

Heat the grill to medium heat.

Combine the chili, soy sauce, ginger, garlic, lemon, and brown sugar in a small mixing bowl. Season with salt and pepper to taste. For 30 minutes, marinate the prawns. Each skewer should have three prawns on it.

Cook the skewers for 3 to 4 minutes on each side over an open heat on the grill. Remove from heat and serve immediately with a squeeze of lemon or lime.
