Spinach Salad with Bacon and Blue Cheese

 

 


A traditional salad with chunks of bacon and blue cheese, as well as bits of thinly sliced onion, packed between a layer of baby spinach.

 

Ingredients

¼ cup extra virgin olive oil

3 tablespoons red wine

1 tablespoon Dijon mustard

2 teaspoons honey

salt and freshly ground pepper to taste

1 tablespoon warmed bacon fat reserved from cooking the bacon

8 cups baby spinach

½ cup halved and thinly sliced red onion

4 ounces crumbled blue cheese

1 cup bacon lardons  

 

Instructions

Combine the olive oil, vinegar, Dijon mustard, honey, salt, and pepper in a large mixing basin. If using, whisk in the bacon grease.

Toss in the spinach and red onion to coat with the dressing. Scatter the blue cheese and bacon over the salad and gently mix. And enjoy!
