Horseradish Cream

  



This horseradish cream is made with fresh horseradish and sour cream or crème frâiche and can be used in a variety of ways. Fresh horseradish renders all of the difference in this recipe, adding tons of flavor and an intense presence. It has been decided that a dollop of this horseradish cream goes with practically anything savory.  Roast meats in particular.

 

Ingredients

1/4 to 1/2 cup grated fresh horseradish, or more to taste.

1 cup crème fraîche or sour cream

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh chives.

Kosher salt, to taste.

 

In a small mixing bowl, incorporate 1/4 cup grated horseradish, crème fraîche or sour cream, lemon juice, and chives, if employing. Season with salt and, according to preference, up to 1/4 cup more horseradish.
