Teriyaki Pork Stir Fry

 



The following teriyaki pork stir fry combines seared pork tenderloin with vibrant greens in a made-at-home teriyaki sauce. It is a simple and healthy meal that is ready in just thirty minutes.

 

FOR THE STIR FRY

1 tablespoon vegetable oil divided use

1 cup broccoli florets

1/2 cup carrots thinly sliced

3/4 cup bell peppers cut into 1-inch pieces, I used red and yellow

1 pound pork tenderloin cut into 1-inch pieces or thinly sliced

1 teaspoon ginger minced

2 teaspoons garlic minced

1 tablespoon sesame seeds

Salt and pepper to taste

 

FOR THE SAUCE

1/4 cup soy sauce

1/2 cup water

3 tablespoons brown sugar

1 tablespoon honey

1 teaspoon toasted sesame oil

1 tablespoon cornstarch

 

In a large pan over medium-high heat, heat 1 teaspoon of the oil. Cook for 4-6 minutes, or until the broccoli, peppers, and carrots are softened and lightly browned. Season with salt and pepper according to preference.

Take out the vegetables from the pan and place them on a plate to keep warm.

Pour in the remaining 2 teaspoons of oil. Season the pork with salt and pepper according to preference. Cook while stirring occasionally, for four to six minutes till the meat has begun to brown and cooked throughout.

Cook for 30 seconds after adding the garlic and ginger to the pan.

Make the sauce while the pork is cooking. In a small pot over medium-high heat, combine the soy sauce, water, brown sugar, honey, and sesame oil. 3 minutes later, the sugar should be dissolved. Increase the heat to high and bring to a boil.

Dissolve the cornstarch in 2 tablespoons of cold water. Boil for 1-2 minutes, or until the sauce has thickened, after adding the cornstarch mixture.

Return the vegetables to the pan with the pork. Toss the vegetables in the sauce to coat. Serve sprinkled with sesame seeds.
