Duck





 Duck is a delicious and versatile meat that can be cooked in a variety of ways. One of the most popular ways to cook duck is to roast it. Roasting duck results in crispy skin and juicy meat.

 

Ingredients:

 

1 whole duck (about 5 pounds)

1 tablespoon salt

1 teaspoon black pepper

2 carrots, cut into chunks

2 celery stalks, cut into chunks

1 cup chicken broth

1/2 cup orange juice

Instructions:

 

Preheat oven to 400 degrees F (200 degrees C).

Rinse the duck and pat it dry with paper towels.

In a small bowl, combine the salt, pepper, thyme, and rosemary. Rub the mixture all over the duck.

Heat the olive oil in a large skillet over medium heat.

Add the duck to the skillet and brown the skin on all sides.

Place the duck in a roasting pan.

Add the onion, carrots, and celery to the roasting pan.

Pour the chicken broth and orange juice into the roasting pan.

Roast the duck for 1 hour, or until the internal temperature reaches 165 degrees F (75 degrees C).

Remove the duck from the oven and let it rest for 10 minutes.

In a small bowl, combine the honey and 1 tablespoon of water.

Brush the honey mixture all over the duck.

Return the duck to the oven and roast for 10 minutes, or until the skin is crispy.

Serve the duck with the vegetables and gravy.
