Mississippi Pot Roast: A Classic Southern Comfort Food

 



 Mississippi pot roast is a hearty and flavorful dish that has been a Southern staple for generations. This slow-cooked roast is typically made with chuck roast, vegetables, and a savory gravy. The key to a delicious Mississippi pot roast is to use high-quality ingredients and allow the flavors to meld together during the cooking process.

 

Ingredients:

 

3-4 pound chuck roast

1 large onion, chopped

2 carrots, chopped

2 celery stalks, chopped

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 teaspoon black pepper

1 bay leaf

1 cup beef broth

1/2 cup red wine

1 tablespoon all-purpose flour

Instructions:

 

Brown the roast: Season the chuck roast with salt and pepper. Heat a large Dutch oven or pot over medium-high heat. Add the roast and brown on all sides. Remove the roast from the pot and set aside.

 

Sauté the vegetables: Add the onion, carrots, celery, and garlic to the pot. Sauté until softened, about 5 minutes.

 

Deglaze the pot: Stir in the Worcestershire sauce, thyme, oregano, black pepper, and bay leaf. Deglaze the pot with the beef broth and red wine, scraping up any browned bits from the bottom of the pot.

 

Return the roast: Return the roast to the pot. Cover and bring to a simmer.

 

Simmer: Reduce heat to low and simmer for 2-3 hours, or until the meat is tender.

 

Thicken the gravy: In a small bowl, whisk together the flour and 2 tablespoons of cold water until smooth. Gradually whisk the flour mixture into the gravy, stirring constantly until thickened.

 

Serve: Serve the Mississippi pot roast with mashed potatoes, rice, or your favorite side dish.

 

Tips:

 

For a richer flavor, use a combination of beef broth and red wine.

You can also add other vegetables to the pot, such as mushrooms or potatoes.

If you don't have red wine, you can substitute it with extra beef broth.

Serve the pot roast with a side of green beans or steamed broccoli.
