Fall Soup Recipe: Creamy Pumpkin Soup A comforting and flavorful soup perfect for the cooler months

 



 Fall is the perfect time for a warm and comforting bowl of soup. This creamy pumpkin soup is a delicious and easy-to-make recipe that is sure to please everyone.

 

Ingredients:

 

1 tablespoon olive oil

1 onion, chopped

2 cloves garlic, minced

1 teaspoon ground ginger

1/2 teaspoon ground cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon salt

1/4 teaspoon black pepper

1 (29-ounce) can of pumpkin puree

3 cups vegetable broth

1 cup heavy cream

1/2 cup chopped fresh parsley

Instructions:

 

Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened about 5 minutes.

Stir in the garlic, ginger, cinnamon, cloves, salt, and pepper. Cook for 1 minute more.  

Add the pumpkin puree, vegetable broth, and heavy cream. Bring to a boil, then reduce heat to low and simmer for 10 minutes, or until heated through.

Stir in the parsley.

Serve hot.

Tips:

 

For a thicker soup, add a tablespoon of cornstarch to the pot with the pumpkin puree, vegetable broth, and heavy cream.

For a spicier soup, add a pinch of cayenne pepper to the pot with the onion and garlic.

To make this soup vegetarian, use vegetable broth and heavy cream.

Serve this soup with crusty bread or a dollop of sour cream.
