Hearty Black Bean Soup

  



This hearty black bean soup is the perfect comfort food for a chilly day. It's packed with protein, fiber, and flavor, and it's easy to make.

 

Ingredients:

 

1 tablespoon olive oil

1 onion, chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1/2 teaspoon chili powder

1/4 teaspoon cayenne pepper

1 (15 ounce) can black beans, rinsed and drained

1 (15 ounce) can crushed tomatoes

4 cups vegetable broth

Salt and pepper to taste

Optional toppings: sour cream, avocado, tortilla chips, cilantro

Instructions:

 

Sauté the vegetables: Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.

Add spices: Stir in the cumin, chili powder, and cayenne pepper, and cook for 30 seconds more.  

Combine ingredients: Add the black beans, crushed tomatoes, and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer for 20-30 minutes, or until the flavors have blended.

Season and serve: Season with salt and pepper to taste. Serve hot, topped with your favorite toppings.

Tips:

 

For a thicker soup, use an immersion blender to puree some of the soup.

Add a can of corn or some chopped green chiles for extra flavor and texture.

Serve with crusty bread or a side salad.
