Ingredients
2 cups fresh blackberries
3 tablespoons balsamic vinegar
6 tablespoons sugar
2 tablespoons lemon juice
Pinch of kosher salt
300 g double cream brie cheese
1 tablespoon fresh thyme, chopped
8 slices sourdough bread
Butter, as needed
Directions
Make the Blackberry Balsamic Jam
In a saucepan over medium-high heat, combine blackberries,
balsamic vinegar, sugar, lemon juice, and a pinch of salt. Bring to a boil,
then reduce to a simmer.
Use a wooden spoon or potato masher to crush the
blackberries. Simmer for 7-10 minutes until the mixture thickens to a jam-like
consistency.
Transfer to a bowl and let cool.
Prepare the Sandwiches
Slice the brie into ½-inch thick pieces.
Heat a skillet over medium heat. Butter one side of four
slices of sourdough bread and place them in the skillet, buttered side down.
Top with brie slices and sprinkle with chopped thyme.
Allow the bread to cook until the brie starts to soften and the bread is
golden.
Assemble the Grilled Cheese
Spread a generous layer of blackberry jam on the
unbuttered side of the remaining four bread slices. Place each slice jam side
down onto the brie-topped bread in the skillet.
Butter the top of each sandwich. Carefully flip each one,
continuing to cook until the cheese is fully melted and both sides of the
sandwich are golden brown.
Serve
Transfer the sandwiches to a cutting board, let cool
slightly, then cut in half. Serve warm and enjoy!
