Ingredients:
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
2 cups fresh peas, shelled
1/2 cup fresh mint leaves, chopped
Salt and pepper to taste
Instructions:
Heat the olive oil in a large pot over medium
heat. Add the onion and garlic and cook until softened about 5 minutes.
Add the vegetable broth, peas, and mint leaves
to the pot. Bring to a boil, then reduce heat to low and simmer for 30 minutes,
or until the peas are tender.
Remove the pot from the heat and let it cool for
a few minutes.
Puree the soup using an immersion blender or a
regular blender.
Season the soup with salt and pepper to taste.
Serve the soup hot or cold.
Tips:
For a creamier soup, you can add a cup of heavy
cream or milk to the soup before blending.
You can also add other vegetables to the soup,
such as carrots, celery, or zucchini.
If you don't have fresh mint leaves, you can use
dried mint leaves.
This soup can be stored in the refrigerator for
up to 3 days.
