Cheesy Potato Casserole




This cheesy potato casserole is the perfect comfort food. It is made with potatoes, cheese, and sour cream, and is topped with a crunchy bread crumb topping. This casserole is easy to make and can be customized to your liking.

 

Ingredients

 

1-pound potatoes, peeled and diced

1 cup milk

1/2 cup butter

1/4 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 cup sour cream

1 cup shredded cheddar cheese

1/2 cup bread crumbs

2 tablespoons butter, melted

Instructions

 

Preheat oven to 350 degrees F (175 degrees C).

Cook potatoes in a pot of boiling salted water until tender. Drain and set aside.

In a saucepan, melt butter over medium heat. Whisk in flour, salt, pepper, and garlic powder. Cook for 1 minute, stirring constantly.

Gradually whisk in milk until it is smooth. Bring to a simmer, stirring constantly until thickened.

Remove from heat and stir in sour cream and cheese.

In a greased 9x13 inch baking dish, layer potatoes and cheese sauce.

Top with breadcrumbs and melted butter.

Bake for 20-25 minutes, or until golden brown and bubbly.

Tips

 

For a spicier casserole, add a pinch of red pepper flakes to the cheese sauce.

To make this casserole ahead of time, assemble it and refrigerate it overnight. Bake for an additional 10 minutes.

This casserole can also be made with different types of cheese, such as Monterey Jack or Colby Jack.
