Here's a simple guide to making your own delicious garlic powder:

Ingredients:

  • Fresh garlic bulbs

Equipment:

  • Sharp knife
  • Cutting board
  • Baking sheet(s)
  • Parchment paper (optional, but recommended for easier cleanup)
  • Food dehydrator (optional, but speeds up the process)
  • Oven (if not using a dehydrator)
  • Spice grinder or a clean coffee grinder

Instructions:

1.   Prepare the Garlic: Separate the garlic cloves and peel them. Thinly slice each clove. Aim for even slices, about 1/8 inch thick, so they dry at a similar rate.

2.   Arrange for Drying:

o   Oven Method: Preheat your oven to the lowest possible setting, ideally around 150-170°F (65-75°C). Line a baking sheet with parchment paper. Spread the garlic slices in a single layer on the baking sheet, ensuring they aren't overlapping.

o   Dehydrator Method: Arrange the garlic slices in a single layer on the trays of your food dehydrator, following the manufacturer's instructions for drying vegetables.

3.   Dry the Garlic:

o   Oven Method: Place the baking sheet in the preheated oven with the door slightly ajar to allow moisture to escape. Dry for several hours, flipping the slices occasionally, until they are completely dry and brittle. This can take anywhere from 2 to 4 hours or even longer, depending on the thickness of your slices and your oven's temperature. Keep a close eye on them to prevent burning.

o   Dehydrator Method: Dry the garlic according to your dehydrator's instructions. This usually takes between 6 to 12 hours, depending on the thickness of the slices and the dehydrator settings. The garlic should be completely dry and snap easily when bent.

4.   Cool Completely: Once the garlic slices are dried, remove them from the oven or dehydrator and let them cool completely. They should be crisp and brittle.

5.   Grind into Powder: Transfer the dried garlic slices to a spice grinder or a clean coffee grinder. Grind until you achieve a fine powder consistency. You may need to do this in batches.

6.   Store Properly: Store your homemade garlic powder in an airtight container away from light, heat, and moisture. It should last for several months, although the flavor will be at its peak in the first few months.

Tips for Success:

  • Don't rush the drying process. Low and slow is key to preventing the garlic from cooking or burning.
  • Ensure the garlic is completely dry before grinding. Any residual moisture can lead to clumping and spoilage.
  • Use a dedicated spice grinder if possible, as garlic powder can leave a lingering aroma in a coffee grinder. If using a coffee grinder, clean it thoroughly afterward.
  • Make a larger batch when you have the time and store it for future use.
