This recipe delivers a rich and flavorful dip that's incredibly easy to whip up. Forget the store-bought tubs; once you taste this homemade version, you'll never go back! Get ready to scoop, spread, and savor every delicious bite.

Classic Creamy Baked Spinach Dip

Yields: 6-8 servings Prep time: 15 minutes Cook time: 25-30 minutes

Ingredients:

  • 2 (10 oz) packages frozen chopped spinach, thawed and squeezed dry
  • 1 (8 oz) block cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese, plus 2 tbsp for topping
  • 1/2 cup shredded mozzarella cheese, plus 2 tbsp for topping
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped yellow onion (or 2 tbsp finely minced shallot)
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • Salt and freshly ground black pepper to taste
  • Optional: a dash of hot sauce or red pepper flakes for a subtle kick

For Serving:

  • Pita chips, tortilla chips, crusty bread, crackers, or fresh vegetable sticks (carrots, celery, bell peppers, cucumber slices)

Instructions:

1.      Prepare the Spinach: This step is crucial for a non-watery dip! Thaw the frozen chopped spinach completely (you can do this in the microwave or overnight in the fridge). Once thawed, place the spinach in a clean kitchen towel or several layers of paper towels and squeeze out as much excess liquid as possible. You'll be surprised how much water comes out!

2.     Mix the Base: In a large mixing bowl, combine the softened cream cheese, mayonnaise, and sour cream. Beat with a hand mixer or stir vigorously with a spoon until smooth and well combined.

3.    Add Flavors: Stir in the 1/2 cup grated Parmesan cheese, 1/2 cup shredded mozzarella cheese, minced garlic, chopped onion, onion powder, garlic powder, salt, and pepper. If using, add a dash of hot sauce or red pepper flakes.

4.    Incorporate Spinach: Add the thoroughly squeezed, dried spinach to the mixture. Fold it in until evenly distributed throughout the creamy base.

5.    Bake the Dip: Preheat your oven to 375°F (190°C). Transfer the spinach dip mixture to an 8x8 inch baking dish or a similarly sized oven-safe bowl. Smooth the top.

6.     Top & Bake: Sprinkle the remaining 2 tbsp of Parmesan cheese and 2 tbsp of mozzarella cheese evenly over the top of the dip.

7.     Bake for 25-30 minutes, or until the dip is hot and bubbly around the edges and the cheese on top is melted and golden brown. If you like it extra browned, you can briefly put it under the broiler for the last minute or two (watch carefully!).

8.    Serve: Let the dip cool for a few minutes before serving. This allows it to set slightly and prevents burned tongues! Serve warm with your favorite dippers.
