Soft & Simple Homemade Sandwich Bread

Yields: 1 standard loaf Prep time: 20 minutes Rise time: 1.5 - 2 hours Bake time: 30-35 minutes

Ingredients:

  • 1 cup warm water (105-115°F / 40-46°C)
  • 2 ¼ teaspoons active dry yeast (one standard packet)
  • 2 tablespoons granulated sugar
  • 1 large egg, at room temperature (optional, for richer dough and golden crust)
  • 3 tablespoons unsalted butter, melted and slightly cooled
  • 3 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt

Equipment:

  • Large mixing bowl
  • 9x5 inch loaf pan
  • Plastic wrap or clean kitchen towel
  • Wire cooling rack

Instructions:

1.  Activate the Yeast: In a large mixing bowl, combine the warm water, yeast, and granulated sugar. Stir gently and let it sit for 5-10 minutes, until foamy. This shows your yeast is active and ready to work!

2.  Add Wet Ingredients: If using, whisk in the egg. Then, stir in the melted butter until well combined.

3.  Combine Dry Ingredients: Add 1 cup of the flour and the salt to the wet mixture. Stir until mostly combined. Gradually add the remaining 2 cups of flour, mixing with a wooden spoon or your hands until a shaggy dough forms.

4.  Knead the Dough: Turn the dough out onto a lightly floured surface. Knead for 8-10 minutes, until the dough is smooth, elastic, and no longer sticky. If using a stand mixer with a dough hook, knead on medium-low speed for 7-8 minutes.

5.  First Rise: Lightly grease the large mixing bowl. Place the dough in the bowl, turning once to coat. Cover the bowl with plastic wrap or a clean kitchen towel and place it in a warm, draft-free spot for 1 to 1.5 hours, or until doubled in size.
