The Recipe: Classic Beef and Rice Stuffed Peppers

Here's a classic recipe that's always a hit. Feel free to experiment with the fillings once you get the hang of it!

Yields: 4 servings Prep time: 20 minutes Cook time: 40-50 minutes

Ingredients:

  • 4 medium bell peppers (any color you like!)
  • 1 tbsp olive oil
  • 1 lb ground beef (or ground turkey/chicken)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup cooked rice (brown or white)
  • 1/4 cup chopped fresh parsley
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheddar or mozzarella cheese (plus extra for topping)
  • 1/2 cup beef or vegetable broth

Instructions:

1.  Prepare the Peppers: Preheat your oven to 375°F (190°C). Wash the bell peppers and cut them in half lengthwise. Remove the seeds and membranes. You can blanch them in boiling water for 5 minutes if you prefer a softer pepper, but it's not strictly necessary.

2.  Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

3.  Brown the Meat: Add the ground beef to the skillet with the onions and garlic. Break it up with a spoon and cook until browned, draining any excess fat.

4.  Combine the Filling: Stir in the undrained diced tomatoes, cooked rice, parsley, oregano, salt, and pepper. Mix well to combine all the ingredients. Remove from heat.

5.  Stuff the Peppers: Place the pepper halves cut-side up in a baking dish. Evenly divide the meat and rice mixture among the pepper halves.

6.  Add Cheese and Broth: Sprinkle about 1 tablespoon of shredded cheese over the top of each stuffed pepper. Pour the beef or vegetable broth into the bottom of the baking dish.

7.  Bake: Cover the baking dish loosely with foil and bake for 30 minutes. Remove the foil, sprinkle with a little extra cheese, and bake for another 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.

8.  Serve: Let the stuffed peppers cool for a few minutes before serving. Enjoy!

Tips for Success

  • Don't Overstuff: Leave a little room at the top of each pepper to prevent the filling from overflowing during baking.
  • Choose Your Peppers: While any color works, red, yellow, and orange bell peppers tend to be sweeter than green ones.
  • Make it Vegetarian: Swap the ground beef for cooked quinoa, lentils, black beans, or a combination of your favorite vegetables like mushrooms, zucchini, and corn.
  • Spice it Up: Add a pinch of red pepper flakes to the filling for a little heat.
  • Serve with a Side: These are great on their own, but also pair well with a simple green salad or some crusty bread.

Stuffed bell peppers are a delightful and wholesome meal that's sure to become a regular in your rotation. Give this recipe a try, and don't be afraid to get creative with your fillings! Happy cooking!
