There are few meals that feel as genuinely comforting and homey as a plate of steaming, savory stuffed peppers. It’s a classic for a reason: the perfect combination of tender, slightly sweet bell peppers and a hearty, flavorful filling, all tied together with melted cheese.
While
everyone seems to have their own version, I’ve perfected a recipe that balances
the richness of the meat (or lentils, for a veggie version) with the brightness
of a simple tomato sauce. The secret? A splash of Worcestershire sauce and a
pinch of smoked paprika in the filling. It gives it a depth of flavor that will
have everyone asking for seconds.
This
recipe is surprisingly simple to prep and makes for a beautiful presentation
when you bring the casserole dish to the table.
Before

Ingredients

Peppers:

medium yellow onion, finely diced
- 2

oz tomato sauce, divided

Instructions
1. Preheat
and Prep:
Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
2. Prepare
the Peppers:
Wash the bell peppers. Cut off the tops (about 1/2 inch down) and carefully
remove all the seeds and membranes from the inside. You can leave the stems on
for presentation or remove them. If the peppers are wobbly, you can slice a
tiny sliver off the bottom so they stand upright, but be careful not to pierce
the bottom.
3. Par-Bake
the Peppers:
Arrange the hollowed-out peppers upright in the prepared baking dish. Brush the
outsides lightly with olive oil and sprinkle with a little salt and pepper. Bake
for 15 minutes while you prepare the filling. This ensures the peppers are
perfectly tender when the filling is done.
4. Cook
the Filling:
While the peppers bake, brown the ground beef and diced onion in a large
skillet over medium-high heat until the meat is cooked through (about 5-7
minutes). Drain any excess grease. Add the minced garlic and cook for 1
additional minute until fragrant.
5. Combine: Stir
in the cooked rice, diced tomatoes (including the juices), half of the
tomato sauce (4 oz), Worcestershire sauce, smoked paprika, and oregano. Season
generously with salt and pepper. Mix until everything is well combined and
heated through.
6. Stuff: Remove
the par-baked peppers from the oven. Generously spoon the beef and rice filling
into each pepper, mounding it high at the top.
7. Add
Sauce and Cheese:
Pour the remaining tomato sauce evenly over the tops of the filled peppers.
Cover the baking dish tightly with aluminum foil.
8. Bake: Return
the dish to the oven and bake for 25 minutes, covered.
9. Melt: Remove
the foil, sprinkle the mozzarella cheese evenly over the tops of each pepper,
and bake for an additional 10 minutes, uncovered, until the cheese is melted,
bubbly, and slightly golden brown.

for 5-10 minutes before serving. This helps the filling set. Garnish with fresh
chopped parsley if desired.
These
stuffed peppers are fantastic as a complete meal on their own, but they also
