Master the Sear: How to Cook Restaurant-Quality Pork Chops in Stainless Steel

 


If you have ever stared at a piece of meat sticking stubbornly to the bottom of a shiny stainless-steel pan, wondering why professional chefs swear by them, you are not alone. Stainless steel can be intimidating, but once you master the secret of the "hot pan, cold oil" technique, it becomes the ultimate tool for achieving an incredible, golden-brown sear.

Today, we are putting stainless steel to the test with thick-cut pork chops. Unlike non-stick pans that prevent the formation of those delicious, browned bits (fond), stainless steel creates them effortlessly—which means not only a gorgeous crust on your pork, but the foundation for an easy, flavorful pan sauce.

A Masterclass in Stainless Steel Searing

Look at that gorgeous, deep-brown crust. That is the magic of cooking meat on stainless steel—crispy on the outside, incredibly juicy on the inside.


The Golden Rule of Stainless Steel: Preheating

If food is sticking to your stainless-steel pan, 99% of the time, the pan wasn't hot enough.

1.      Heat the Dry Pan: Place your stainless-steel skillet over medium heat for 2 to 3 minutes without any oil.

2.      The Water Test: Drop a tiny droplet of water into the pan. If it sizzles away instantly, it’s not ready. If the water droplet rolls around like a little mercury bead (the Leidenfrost effect), your pan is at the perfect temperature!

3.      Add Oil: Now, add your high-smoke-point oil, swirl it to coat, wait 10 seconds for it to shimmer, and add your food. It will be released naturally when the sear is complete.

The Recipe: Pan-Seared Pork Chops with Garlic Butter Pan-Sauce

Yields: 2–4 servings

Prep time: 10 minutes | Cook time: 12 minutes

Ingredients

  • 2 thick-cut bone-in pork chops (about 1.5 inches thick)
  • 1 tablespoon high-smoke oil (avocado, canola, or grapeseed oil)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, smashed
  • 1 sprig of fresh rosemary or thyme
  • Kosher salt and freshly cracked black pepper

Instructions

1. Prep the Meat: Take the pork chops out of the fridge 20 minutes before cooking. Pat them completely dry with paper towels (moisture is the enemy of a good sear on stainless steel). Season generously with salt and pepper on all sides.

2. Heat the Stainless-Steel Skillet: Place your stainless steel skillet over medium-high heat for 2–3 minutes. Perform the water droplet test to ensure it is properly preheated.

3. Sear: Add the oil and swirl to coat. Carefully lay the pork chops away from you into the hot pan. Do not move them! Let them sear undisturbed for 4 to 5 minutes until a deep golden-brown crust forms and they naturally release from the pan.

4. Flip and Baste: Flip the chops. Immediately drop the butter, smashed garlic, and sprig into the pan. As the butter melts and foams up, use a large spoon to continuously scoop the hot, bubbly garlic butter over the top of the chops (this is called baste) for another 3 to 4 minutes.

5. Check Temperature: Use an instant-read thermometer. Pull the chops off the heat when they reach an internal temperature of 145°F (63°C).

6. Rest: Transfer the pork chops to a warm cutting board or plate. Let them rest for 5 minutes. (This allows all those delicious juices to be redistributed).

7. Sauce and Serve: Spoon the remaining garlic herb juices right over the top of the chops before serving!
