Kenya’s Mama’s Kitchen Seasoning Review: Bringing the Flavors of Africa to Your Kitchen

 



If you love discovering new flavors and adding a little excitement to your everyday meals, Kenya’s Mama’s Kitchen is a brand worth checking out. In February 2022, Kenya Mama's Kitchen was founded.

I always enjoy trying seasonings that can take an ordinary meal and turn it into something special, and these blends certainly bring plenty of flavor to the table.




For this review, I tried two of their seasoning blends: Spicy Safari Seasoning Blend and African Seasoning Blend. Each one has its own personality and can be used in so many ways—from meats and vegetables to rice, potatoes, soups, and marinades.



The Spicy Safari blend is a great choice when you want to give your food a flavorful kick. It adds a warm, savory depth that works especially well with chicken, beef, seafood, roasted vegetables, and potatoes.

What I really like about a seasoning blend like this is its versatility. You don't need to make an elaborate recipe to enjoy it. A simple sprinkle can make a big difference in the flavor of your meal.

Directions

1. Cut the chicken into bite-sized pieces and place them in a bowl.

2. Add olive oil, Spicy Safari Seasoning, garlic, and lemon juice. Toss until the chicken is well coated.

3. Let the chicken marinate for about 20–30 minutes if time allows.

4.  Heat a large skillet over medium-high heat.

My serving idea: Add a spoonful of sour cream or plain Greek yogurt on the side if you want to mellow the heat.



Recipe 2: African Seasoned Chicken & Coconut Rice

Ingredients

For the chicken:

  • 1½ pounds chicken thighs or chicken breast
  • 2 tablespoons of olive oil
  • 1½ tablespoons Kenya’s Mama’s Kitchen African Seasoning Blend
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced

For the rice:

  • 1½ cups long-grain white rice
  • 1 cup coconut milk
  • 1½ cups chicken broth
  • ½ teaspoon salt
  • 1 tablespoon butter
  • ½ cup diced carrots
  • ½ cup peas

Directions

1.  Place the chicken in a bowl and add olive oil, African Seasoning Blend lemon juice and garlic. Toss well.

2.  Allow the chicken to marinate for 20–30 minutes.

3. Heat a skillet over medium heat and cook the chicken until nicely browned and cooked through. Set aside.

4. For the rice, rinse the rice under cold water.

5.  Add the rice, coconut milk, chicken broth, salt, butter, and carrots to a saucepan.

6. Bring it to a gentle boil, then reduce the heat, cover, and simmer according to the rice package directions.

7. During the last few minutes of cooking, stir in the peas.

8. Fluff the rice with a fork and serve with the seasoned chicken.

9. Sprinkle a little additional African Seasoning Blend over the finished dish for extra flavor.

Option: Add sliced green onions, fresh cilantro, or a squeeze of lime before serving.

 There are few things in life as comforting and universally loved as a warm, fresh-from-the-oven homemade biscuit. While we all love a classic buttermilk biscuit, sometimes you want something richer, more tender—something that truly lives up to its name.

Enter the Homemade Butter Biscuit.

Unlike traditional flaky biscuits which rely on cold, hard fat cut into the dough, this recipe uses a different technique. We are using melted butter and a gentle folding method. The result isn't necessarily sky-high, flaky layers, but rather a supremely tender, soft, and pillowy crumb that literally melts in your mouth. They are savory, rich, and absolutely perfect for smothering in jam, honey, or—ironically—more butter.

This recipe is incredibly simple and comes together in about 30 minutes. Let's get baking!

 

Before we get our hands dusty with flour, look at the goal. Golden brown tops, soft sides clinging together, and a tender texture you can practically see it through the screen. These are biscuits made with love (and a lot of butter).

The Recipe: Tender Melt-in-Your-Mouth Butter Biscuits

Ingredients

  • 2 ½ cups (315g) all-purpose flour (spooned and leveled)
  • 1 tablespoon baking powder (aluminum-free is best)
  • 1 teaspoon granulated sugar
  • 1 teaspoon kosher salt
  • ½ teaspoon cream of tartar (this helps activate the baking powder and gives that classic tender bite)
  • ½ cup (1 stick or 113g) unsalted butter, melted and slightly cooled
  • 1 cup (240ml) whole milk, cold
  • Optional for topping: Melted butter and a sprinkle of coarse sea salt (as seen in the photo)

Instructions

1.   Preheat and Prep: Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper. For biscuits with soft sides that cling together (like the ones pictured), use a 9-inch round cake pan. For crispy sides, use a baking sheet and space them apart.

2.   Whisk Dry Ingredients: In a large mixing bowl, sift together the flour, baking powder, sugar, salt, and cream of tartar. Whisk thoroughly to ensure everything is evenly distributed.

3.   Combine Wet and Dry: Pour the melted and slightly cooled butter into the cold whole milk while stirring the milk constantly with a fork or spatula. This will create small, soft clumps of butter—that is exactly what you want! Immediately pour this mixture into the dry ingredients.

Gather scraps, gently pat them down, and cut more biscuits until all dough is used.

While it’s a staple of Southern fish fries and diners, achieving that perfect restaurant-quality fry at home can be intimidating. But fear not! Today, I’m sharing my foolproof recipe for the crispiest fried catfish, complete with a seasoned cornmeal breading that locks in moisture and delivers maximum crunch.

The secret isn't just the dredge; it’s the soak. We’re going to marinate the catfish fillets in buttermilk and hot sauce before breading them. This step not only tenderizes the fish but also creates the perfect "glue" for the cornmeal mixture to cling to, ensuring that signature crust (pictured below) doesn't slide off when you bite into it.

Frikadeller are traditional Danish meatballs. Unlike their Italian cousins, they aren't swimming in marinara; they are shaped like slightly flattened ovals and pan-fried until they achieve a perfect, golden-brown crust. They are light, savory, and usually served with boiled potatoes, a rich brown gravy, and the tangy contrast of pickled red cabbage.
