African Pancakes

 


African Pancakes are a warm, rich, soft, and delicious mix between crepes and American pancakes. A fantastic make-ahead breakfast that can be topped with butter, syrup, or cinnamon sugar!

 

Ingredients

 

2 cups flour

1 1/2 cup milk

1/2- 2/3 cup sugar

6 eggs

1/4 cup melted butter

1 teaspoon vanilla flavor

1/4- 1/2 teaspoon nutmeg

1/2 cup oil optional

 

Sift the flour, sugar, nutmeg, and salt. In a large mixing basin, combine eggs and milk using an electric mixer or by hand. Mix in the flour mixture until everything is well combined. Finally, add the melted butter.

Allow the batter to rest in the refrigerator for an hour or longer, or overnight.

 

Heat a skillet or nonstick frying pan over medium heat, then gently cover with vegetable oil, cooking spray, or clarified butter. Then, depending on the size of your fry pan or skillet, pour about a 1/2 cup of batter. Tilt the pan so that the batter covers the entire bottom. Cook for about 2 minutes, or until the bottom is light brown.

Cook the opposite side after lifting with a spatula. Sprinkle with cinnamon sugar, powder sugar, or syrup while still hot.

Greek Chicken Marinade

 


If you don't count the salt and pepper, this Greek chicken marinade has only 5 ingredients. Can't get better then that!

 

Ingredients

 

1 pound boneless skinless chicken breasts (about 2 large breasts)

cup plain Greek yogurt

¼ cup olive oil

4 lemons

4-5 cloves garlic pressed or minced

2 tablespoons dried oregano

1 teaspoon kosher salt

½ teaspoon freshly ground black pepper

 

Set aside the chicken pieces in a freezer bag or a dish.

In a medium mixing bowl, combine the Greek yogurt and olive oil. Add one of the lemons to the bowl after zesting it. Pour the lemon juice into the bowl with the zest. Set aside the remaining three lemons. Stir in the minced garlic, oregano, kosher salt, and black pepper with the lemon juice and zest. Pour half of the marinade into the freezer bag or dish with the chicken pieces, leaving the other half for basting. Marinate the chicken in the fridge for 30 minutes or up to 3 hours.

 

When preparing to grill, gently coat the grill grate with vegetable oil or cooking spray and heat to medium high.

Grill the chicken, basting with the remaining marinade and flipping frequently so each side browns and has light grill marks, for 15-20 minutes, or until the chicken juices run clear. Add the 3 sliced lemons on the grill for the last 5 minutes of grilling, rotating once or twice. Allow 5 minutes for the chicken to rest before slicing and serving with the grilled lemons. Keep leftovers in the refrigerator for up to 3 days.

HAMBURGER STROGANOFF

 


 Better then store bought!

 

Ingredients

1 pound lean hamburger 80/20

1/2 cup minced onion

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

10 oz can cream of mushroom soup

8 oz dried egg noodles 1-2 cups water as needed

3 oz. cream cheese

1/2 cup sour cream

 

Brown the meat in a large skillet. (Drain any extra oil if required.) Stir in the chopped onion, garlic powder, onion powder, kosher salt, and freshly ground black pepper after the burger has browned.

Mix in the cream of mushroom soup well. To begin, stir in the egg noodles and one cup of water. I prefer to just slightly cover the noodles with water before whisking them together. The water will transform into a delicious gravy while it cooks.

Cook until the noodles are soft, about 12-18 minutes on low heat. Add additional water, 1/2 cup at a time, as required.

 

Add the cream cheese and sour cream just before serving. Stir until the mixture is smooth and creamy.

 

Serve with mashed potatoes if preferred. Serves 4-6 people.

New York Strip Steak Frites with Rosemary Flake Salt

 


What could possibly go wrong with steak frites? For the ultimate mic drop, sprinkle with rosemary flake salt.

 

Ingredients

US|METRIC

2 SERVINGS

1/2 pound russet potatoes (sliced into fries)

4 tablespoons olive oil (divided)

1 teaspoon sea salt

1/2 teaspoon black pepper

1/4 teaspoon garlic powder

1 pound New York strip steak (2 inches thick)

2 tablespoons butter

1 tablespoon rosemary (chopped small, for the rosemary salt)

1 teaspoon flake salt (for the rosemary salt)

 

Preheat the oven to 450°F and prepare a baking sheet with parchment paper.

2 tablespoons olive oil for the fries Place the fries on a baking sheet and bake for 20 minutes, or until crisp.

Meanwhile, mix the salt, pepper, and garlic powder in a small bowl. Then, using your fingers, massage the rub into all sides of the steak. Allow the steak to rest for 30 minutes on the counter.

Sheet Pan Fajitas with Steak

 


These are the greatest sheet pan fajitas with steak I've ever had! They're extremely quick and easy to make, ready in about 20 minutes.  Also ideal for dinner preparation. You can serve them in lettuce cups for a Whole30, low carb, or paleo alternative, or in normal tortillas, with a fast guacamole and prepared with flank beef.

 

3 large bell peppers preferably 1 red, 1 orange, 1 yellow, seeded and sliced into 1/2" strips

1 large red onion halved and sliced into 1/4" pieces

1/4 cup avocado oil

2-3 cloves garlic minced or pressed

2 teaspoons chili powder

juice of 1/2 lime

1 teaspoon oregano

1 teaspoon ground cumin

2 teaspoons salt

1 lb. thinly sliced flank steak or “fajita” steak

lettuce cups or tortillas

 

Guacamole

3 avocados peeled and seeded

1/4 cup pico de gallo or fresh salsa

juice of 1 lime

1 teaspoon salt

 

To Serve

Fresh salsa

Limes to serve

Fresh chopped cilantro

Fresh chopped red onion

Radishes

 

Before cooking, prepare all of the ingredients: slice the peppers, slice the steak, peel and seed the avocados, chop the garlic, and so on. Preheat the broiler with the oven racks divided in thirds, and set the baking sheet on the top rack.

In a small mixing dish, combine avocado oil, garlic, spices, and salt. Toss the peppers and onions in a large mixing basin with half of the garlic-seasoning mixture to coat. Carefully but quickly take the baking pan from the oven and distribute the peppers and onions on top. Return to the oven for 7 minutes, or until the vegetables begin to soften and brown.

 

Make the guacamole while the peppers and onions are cooking. Mash avocado meat, lime juice, fresh salsa, and salt to desired consistency; season with additional salt if needed.

In a large mixing basin, combine the sliced steak with the remaining garlic seasoning; toss well to coat. When the peppers and onions are done, gently remove the baking pan from the oven and use a spatula to make a space between them. Place the steak in a single layer, taking care not to crowd it. Return to the oven for 4 minutes, or until the top is evenly golden and the meat is medium rare. The temperature of the steak will most likely be medium-rare on the bottom but not on the top.

 

Remove from oven and serve in tortillas or lettuce cups with guacamole, additional fresh salsa, and, if preferred, fresh chopped cilantro and/or red onion.

Roasted Stuffed Acorn Squash

 


Every Fall, I attempt new dishes, and this year's is a new favorite: Roasted (delicious), Stuffed  Acorn Squash.   Try this dish for Thanksgiving or anytime throughout the cooler months.

 

ROASTED STUFFED ACORN SQUASH RECIPE (Vegan Style)

4 Acorn Squash

1 Block Extra Firm Tofu

Olive Oil

1 Onion, small/yellow, diced

2-4 Celery stalks, small dice

2 Tbs Nutritional Yeast

1 Tbs Soy Sauce

2 Tbs Tahini

2 tsp Apple Cider Vinegar

1 tsp Black Pepper

1/2 tsp Salt

2 tsp Paprika

2 tsp Chili Powder

1 tsp Fennel

1/4 tsp Celery Seed

2 tsp Garlic Powder

 

MIXED TOFU

Firstly, press your tofu block to prepare it. Drain the box and cover the block in a couple of paper towels to accomplish this. Place the tofu block on a dish and weigh it down with a pan or heavy pot to press out the liquid.

Preheat the oven to 400 degrees Fahrenheit.

Unwrap the tofu and drain the excess liquid after 15-30 minutes. Set aside.

Combine all of your spices, tahini, apple cider vinegar, and soy sauce in a mixing bowl. To this mixture, crumble the tofu and incorporate with a fork or whisk. Spread the tofu mixture on a small baking pan and bake for 15-25 minutes, or until the crumbles begin to crisp.

 

Set aside your onion and celery after you've diced them.

 

SQUASH OF ACORN

After that, start prepping the acorn squash. Cut the squash in half across its length for large discs (cutting off the top stem and bottom tip and then cutting in the center) or in half across its length for small discs.

Remove the seeds from the squash (or preserve them for roasting! ), and place the acorn squash on a deeper cooking pan.

Place the squash in the oven after lightly rubbing it with olive oil. 30 minutes in the oven The tofu sausage should be ready at this stage.

Pull the tofu from the oven and set it aside when it is done.

 

MIXED VEGETABLES

Return to the onion and celery while the squash bakes by heating a little sprinkle of oil in a pan over medium-high heat and sautéing the veggies until they turn translucent. Approximately 5-7 minutes.

After that, add the tofu and stir for 2-3 minutes before removing from the fire.

 

STEPS TO COMPLETE

Pull the squash from the oven after 30-40 minutes and stuff the onion, celery, and tofu mixture into the squash rounds or halves. If desired, bake any leftover vegetable combination or preserve it for a morning hash.

Place the squash back in the oven for another 25-30 minutes.

 

When the squash is done, stab it with a fork and it should slide through cleanly, with a tiny crunch from the oil.

 

Serve the squash immediately. You can eat the skin or peel it off, but either way it's delicious. Optionally, sprinkle with nutritional yeast.

Maple Bacon Brussels Sprouts

 


Brussels sprouts with caramelized maple bacon that really are sweet, smoky, and salty. These delicious sprouts are made with only four ingredients, making them the ideal last-minute Holiday side dish!

 

Ingredients

1 lb (16 oz) Brussels sprouts

5 slices thick-cut bacon diced

2 tablespoons (30 mL) balsamic vinegar

2 tablespoons (30 mL) pure maple syrup

kosher salt

freshly ground black pepper

 

Remove the Brussels sprouts' root ends and any loose outer leaves. Cut in half.

Render the bacon grease in a large pan over low to medium-low heat. When the fat has mostly melted, increase the heat to medium-high and fry the bacon until it is caramelized and crispy. Set aside on a plate lined with paper towels to drain. Remove the bacon grease from the pan, leaving only 2 tablespoons.

 

 

Caramelize the Brussels sprouts on one side in the skillet. Deglaze the pan with the vinegar, scraping out any brown pieces with a spatula and incorporating them with the Brussels sprouts. Continue to sauté the Brussels sprouts for a few minutes over high heat, stirring the pan, until tender. Return the bacon to the pan, along with the maple syrup. Stir until the Brussels sprouts are uniformly coated with the syrup. Season with salt and pepper to taste and serve immediately.

Ingredients

 

 

 

4 chicken breast, marinated, grilled and sliced

12 oz pack of bacon, diced small

1 onion, diced small

3 cloves minced garlic

4 eggs

1 cup grated parmesan

1 cup heavy cream

1/2 tsp salt

1/2 tsp Black Pepper

1/2 cup of frozen peas

16 oz pasta, cooked al dente with 1/2 cup pasta water reserved

 

Fry the bacon until it is extremely crispy. Remove the bacon and set it aside. Remove all except 2 tbsp of the bacon fat from the pan. Sauté the onions in the leftover bacon oil for 5 minutes over medium heat. Cook for 1 minute further, stirring frequently, after adding the garlic. Place aside. Place the pasta in a pot of boiling water and cook until al dente, as directed on the package. While the pasta is boiling, whisk together the eggs, Parmesan cheese, heavy cream, salt, and pepper in a separate bowl until smooth.

 

When the pasta is done, save 1/2 cup of the pasta water before draining and re-entering it into the boiling pot. While the spaghetti is still hot, slowly sprinkle in half of the egg mixture, stirring constantly. The sauce should thicken and coat the pasta. Add the frozen peas, bacon, and sautéed onion/garlic after half of the sauce has been added. Finish by adding the sauce and stirring until everything is mixed. Then, to aid with consistency, add the saved 1/2 cup pasta water. Toss in the grilled chicken and serve!

When a product has a story and a history, you know it's got to be great. And today I got to cook with such products.
