LOW COUNTRY BOIL

 


Low Country Boil is a Southern classic that is sure to satisfy! Delicate shrimp are cooked with robust potatoes, smoky sausage, sweet corn, and old bay flavor. This easy one-pot recipe, also known as Frogmore Stew, is ideal for a celebration as well as a relaxed evening dinner!

 

1/2 cup old bay seasoning

2-3 lemons quartered

1 lb baby potatoes

1 large yellow onion cut into 1-inch chunks

6 cloves garlic smashed

1 lb smoked sausage cut into 1/4-inch pieces

4 ears corn

2 lb raw large shrimp deveined

Optional for Serving

butter

chopped parsley

 

Directions

Cover a big saucepan halfway with 4 quarts of water. Combine the old bay seasoning, quartered lemons, mashed garlic, potatoes, and onions in a mixing bowl. Bring to a boil after that.

Boil for about 10 minutes, or until the potatoes are just starting to soften. Combine the corn and sausage in a mixing bowl. Boil for another 4-5 minutes. Cook for about 2 minutes, or until the shrimp turn pink and translucent. Remove from the heat and set aside 1 cup of the broth. Strain the liquid and place the shrimp and veggies on a dish or on a piece of newspaper.

End up serving with remaining broth, melted butter, and minced parsley, if desired.
