Ingredients:

 

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

16 ounces cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 cup fresh blueberries

Powdered sugar, for dusting (optional)

Instructions:

 

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

 

In a medium bowl, combine the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Mix until the crumbs are evenly moistened.

 

Press the crumb mixture firmly into the bottom of the prepared baking pan to form the crust. Use the back of a spoon or a flat-bottomed glass to press it down evenly.

 

In a large mixing bowl, beat the softened cream cheese and 1/2 cup granulated sugar until smooth and creamy.

 

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract, lemon zest, and fresh lemon juice until fully incorporated.

 

Gently fold in the fresh blueberries into the cream cheese mixture, being careful not to crush them.
