Avocado Egg Boats with bacon are a delicious and nutritious breakfast option. Here’s a simple recipe for you to try:

 

Ingredients:

2 ripe avocados

4 eggs

4 strips of bacon

Salt and pepper, to taste

Chopped chives or parsley for garnish (optional)

Shredded cheese (optional)

Instructions:

 

Preheat your oven to 425°F (220°C).

Cook the bacon strips until crispy. Once cooked, place them on a paper towel to drain and cool, then crumble them into small pieces.

Slice the avocados in half and remove the pits. Scoop out a little bit of the avocado flesh to create a larger cavity for the egg.

Place the avocado halves on a baking sheet. Carefully crack an egg into the center of each avocado half. It’s okay if some of the egg white spills over.

Season with salt and pepper, then sprinkle the crumbled bacon on top. Add shredded cheese if desired.

Bake in the preheated oven for about 15-20 minutes, or until the eggs are cooked to your liking.
