Grilled Steak with Chimichurri Sauce




 Summer is in full swing, and that means firing up the grill!  This recipe for grilled steak with chimichurri sauce is the perfect way to enjoy a delicious and flavorful meal outdoors.

 

What is Chimichurri Sauce?

 

Chimichurri is a vibrant green sauce that is native to Argentina and Uruguay. It is traditionally made with parsley, garlic, olive oil, vinegar, and oregano.  There are many variations of chimichurri, but this recipe keeps it simple and fresh.

 

Ingredients:

 

2 flank steaks (or your favorite cut of steak)

1/2 cup olive oil

1/4 cup chopped fresh parsley

2 cloves garlic, minced

1 tablespoon red wine vinegar

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Instructions:

 

Marinate the Steak: In a large bowl, whisk together the olive oil, parsley, garlic, vinegar, oregano, red pepper flakes (if using), salt, and pepper. Add the steak to the marinade and toss to coat. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.

 

Prepare the Grill: Preheat your grill to medium-high heat.

 

Grill the Steak: Remove the steak from the marinade and let it come to room temperature for 10 minutes. Grill the steak for 4-5 minutes per side, or until desired doneness is reached.

 

Make the Chimichurri Sauce: While the steak is grilling, whisk together the ingredients in a small bowl.

 

Serve: Slice the steak thinly against the grain and serve immediately with chimichurri sauce on the side.

 

Tips:

 

For a thicker chimichurri sauce, you can mash some of the parsley with a spoon before adding it to the sauce.

If you don't have fresh parsley, you can substitute it with 1 tablespoon of dried parsley.

Chimichurri sauce can also be used on chicken, fish, or vegetables.

Leftover chimichurri sauce can be stored in the refrigerator for up to 5 days.
