Summertime Simplicity: Grilled Lemon Herb Potato Salad

  



Summer is a time for fresh flavors, relaxed gatherings, and of course, delicious food.  Potato salad is a classic summertime side dish, but sometimes the traditional mayonnaise-based version can feel a bit heavy for a hot day.  This grilled lemon herb potato salad is a lighter and more refreshing take on the classic, perfect for backyard barbecues, picnics, or potlucks.

 

Ingredients:

 

For the potatoes:

2 pounds small new potatoes, halved or quartered

2 tablespoons olive oil

1 teaspoon dried thyme

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

For the lemon herb dressing:

1/4 cup olive oil

2 tablespoons fresh lemon juice

1 tablespoon Dijon mustard

1 teaspoon honey

1/2 teaspoon dried oregano

1/4 teaspoon dried parsley

Salt and freshly ground black pepper, to taste

Instructions:

 

Prepare the potatoes: In a large bowl, toss the potatoes with olive oil, thyme, garlic powder, salt, and pepper.

Grill the potatoes: Preheat your grill to medium-high heat. Arrange the potatoes on a grill basket or grill pan and cook for 15-20 minutes per side or until tender and lightly charred.

Make the dressing: While the potatoes are grilling, whisk together olive oil, lemon juice, Dijon mustard, honey, oregano, parsley, salt, and pepper in a small bowl.

Assemble the salad: Once the potatoes are cooked, transfer them to a large serving bowl. Let them cool slightly before adding the lemon herb dressing. Toss to coat the potatoes evenly.

Serve: Garnish the potato salad with additional fresh herbs, such as chopped chives or parsley, if desired. Serve warm or at room temperature.

Tips:

 

For a smoky flavor, add a few wood chips to your grill while preheating.

If you don't have a grill, you can roast the potatoes in a preheated oven at 400°F (200°C) for 25-30 minutes, or until tender and golden brown.

This potato salad can be customized with your favorite add-ins. Try chopped red onion, crumbled feta cheese, or chopped roasted vegetables.

Leftover potato salad can be stored in the refrigerator for up to 3 days.
