Summer Pie

 



 Summer is the perfect season to indulge in a refreshing and fruity pie. Here’s a delightful recipe for a Summer Berry Pie that’s sure to be a hit at any gathering.

 

Summer Berry Pie

Ingredients:

 ¾ cup All-Purpose Flour

¾ cup Whole-Wheat Pastry Flour

1 tablespoon Granulated Sugar (plus 2/3 cup, divided)

¾ teaspoon Salt (plus 1/8 teaspoon, divided)

2 tablespoons Vegetable Shortening (or cold lard)

6 tablespoons Canola Oil (divided)

4 tablespoons Ice Water

¾ teaspoon Distilled White Vinegar

1 ½ cups Fresh Blackberries

1 ½ cups Fresh Blueberries

1 ½ cups Fresh Raspberries

1 ½ cups Quartered Fresh Strawberries

6 tablespoons Cornstarch

1 teaspoon Lime Juice

⅓ cup Rolled Oats

3 tablespoons Light Brown Sugar (packed)

Instructions:

 

Begin by making the crust. In a bowl, mix together both flours, 1 tablespoon of sugar, and ¾ teaspoon of salt. Cut in the shortening until the mixture resembles coarse crumbs. Drizzle 4 tablespoons of oil over the flour mixture, and mix until the dough starts to come together. Add ice water and vinegar, stirring until just combined.

Form the dough into a ball, wrap it in plastic, and refrigerate for at least 1 hour.

Preheat your oven to 375°F (190°C). Roll out the dough on a floured surface and fit it into a 9-inch pie pan. Trim the excess and crimp the edges.

In a large bowl, toss together the berries, remaining sugar, cornstarch, lime juice, and a pinch of salt. Pour the berry mixture into the crust.

For the topping, combine oats, brown sugar, and remaining oil until crumbly. Sprinkle over the pie.

Bake for about 50 minutes, or until the filling is bubbly and the crust is golden brown.
