Sweet and Savory Pineapple Rice

  



This recipe is a delicious and refreshing way to enjoy rice. The sweet and savory flavors of pineapple, mango, and coconut milk combine to create a dish that is perfect for any occasion.

Ingredients:

  • 1 cup jasmine rice
  • 1 cup pineapple chunks, fresh or canned
  • 1/2 cup mango chunks, fresh or frozen
  • 1/2 cup coconut milk
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped almonds
  • 1/4 cup chopped coconut flakes
  • 1/4 teaspoon salt

Instructions:

1.   Rinse the rice in a fine-mesh sieve until the water runs clear.

2.   In a medium saucepan, combine the rice, pineapple chunks, mango chunks, coconut milk, cilantro, almonds, coconut flakes, and salt.

3.   Bring the mixture to a boil, then reduce heat to low and simmer for 20 minutes, or until the rice is cooked through.

4.   Stir in the salt and serve hot.
