Grilled Pineapple Chicken

 



 This recipe is a great way to add a touch of sweetness to your next grilled chicken dinner. The pineapple adds a tropical flavor that is perfect for summer.

Ingredients:

  • 1 (2-pound) boneless, skinless chicken breast
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons olive oil
  • 1 tablespoon grated ginger
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14-ounce) can pineapple chunks, drained

Instructions:

1.   In a large bowl, whisk together the pineapple juice, soy sauce, brown sugar, olive oil, ginger, garlic powder, salt, and pepper.

2.   Add the chicken breast to the bowl and turn to coat.

3.   Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours.

4.   Preheat the grill to medium-high heat.

5.   Remove the chicken breast from the marinade and discard the marinade.

6.   Grill the chicken breast for 10-12 minutes per side, or until cooked through.

7.   Add the pineapple chunks to the grill for 2-3 minutes per side, or until heated through.

8.   Serve the chicken breast with the pineapple chunks and your favorite grilled vegetables.
