Pierogi




  Pierogi are a type of dumpling that is popular in Poland. They are made of dough that is filled with a variety of ingredients, such as potato, cheese, sauerkraut, and mushrooms. Pierogi are typically served with sour cream, onions, and butter.

 

Ingredients

 

2 cups all-purpose flour

1 teaspoon salt

1 large egg

1/2 cup warm water

1/4 cup sour cream

1 pound potatoes, peeled and quartered

1/2 cup chopped onion

1/4 cup butter

1/4 cup sour cream

1/4 cup chopped green onions

Instructions

 

In a large bowl, combine the flour and salt.

Make a well in the center of the flour and add the egg, warm water, and sour cream.

Stir until the dough comes together.

Turn the dough out onto a floured surface and knead for 5 minutes, or until the dough is smooth and elastic.

Wrap the dough in plastic wrap and let it rest for 30 minutes.

In a large pot, boil the potatoes until they are tender.

Drain the potatoes and mash them.

Add the onion and butter to the mashed potatoes and stir to combine.

Roll out the dough on a floured surface to a thickness of about 1/8 inch.

Cut out circles of dough using a 3-inch cookie cutter.

Place a spoonful of the potato filling in the center of each circle of dough.

Fold the dough over the filling and pinch the edges together to seal.

Bring a large pot of salted water to a boil.

Cook the pierogi for 3-5 minutes, or until they float to the surface.

Remove the pierogi from the pot and drain.

Serve the pierogi with sour cream and green onions.
