Greek Pasta






Here's a recipe for Greek-style pasta with a tasty combination of flavors:

Ingredients:8 ounces (about 225 grams) penne pasta (or any pasta of your choice)
2 tablespoons olive oil
1 small red onion, finely chopped
3 cloves garlic, minced
1 can (14 ounces) diced tomatoes, drained
1/2 cup Kalamata olives, pitted and sliced
1/2 cup crumbled feta cheese
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh oregano (or 1 teaspoon dried oregano)
Salt and pepper to taste
Optional: crushed red pepper flakes for a bit of heat
Lemon wedges for serving

Instructions:

Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta cooking water.


In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.


Add the minced garlic to the skillet and cook for another minute until fragrant.


Stir in the drained diced tomatoes and sliced Kalamata olives. Cook for 3-4 minutes, allowing the flavors to blend together.


Add the cooked pasta to the skillet along with a splash of reserved pasta cooking water. Toss everything together to coat the pasta evenly with the tomato and olive mixture. If the pasta seems dry, add more pasta cooking water as needed.


Reduce the heat to low and add the crumbled feta cheese, chopped parsley, and chopped oregano to the skillet. Season with salt, pepper, and optional crushed red pepper flakes to taste. Gently toss everything together until the feta cheese starts to melt and create a creamy sauce.


Remove the skillet from heat and let it sit for a minute to allow the flavors to meld together.


Serve the Greek pasta hot, garnished with additional crumbled feta cheese, chopped parsley, and a squeeze of fresh lemon juice from the lemon wedges.
