Ingredients
3 cups corn kernels (fresh, canned and drained, or frozen and thawed)
4 ounces cream cheese, softened
½ cup sour cream
¼ cup mayonnaise
1 cup shredded Mexican blend cheese
½ cup crumbled cotija cheese
1 tablespoon butter
2 cloves garlic, minced
1 teaspoon chili powder
½ teaspoon smoked paprika
½ teaspoon cumin
Juice of 1 fresh lime
¼ cup chopped fresh cilantro
2 green onions, chopped
Salt and black pepper to taste
Optional Toppings
Extra crumbled cotija cheese
Diced jalapeños
Extra chili powder
Fresh cilantro
Crumbled bacon
A drizzle of hot sauce
Lime wedges
Directions
Heat a large skillet over medium heat and melt the butter.
Add the corn kernels and cook for approximately 5–7 minutes, stirring occasionally, until the corn begins to brown slightly. This gives the corn a wonderful roasted flavor.
Add the minced garlic, chili powder, smoked paprika, and cumin. Stir and cook for another minute.
In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix until smooth and creamy.
Add the shredded Mexican cheese, cotija cheese, lime juice, chopped cilantro, and green onions.
Stir in the warm corn mixture until everything is well combined.
Season with salt and black pepper to taste.
Transfer the mixture to a serving dish or small baking dish.
If you prefer a warm dip, bake at 350°F for approximately 15–20 minutes until heated through and bubbly.
Remove from the oven and finish with extra cotija cheese, cilantro, diced jalapeños, and a sprinkle of chili powder.
Serve warm with your favorite chips!
What Makes Loaded Street Corn Dip So Delicious?
The secret to this dip is the combination of flavors and textures.
The corn brings a natural sweetness and a little crunch. The cream cheese, sour cream, and mayonnaise create a rich and creamy base. The cotija cheese adds a salty, slightly tangy flavor, while the lime juice brightens everything up.
The chili powder, cumin, and smoked paprika bring a wonderful smoky flavor without overpowering the other ingredients.
And if you like a little extra heat, adding jalapeños or your favorite hot sauce is a great way to give this dip some personality!
What Goes Great with Loaded Street Corn Dip?
There are so many delicious ways to enjoy this dip. Here are some of my favorite serving ideas:
Tortilla Chips: Perfect for scooping up all that creamy goodness.
Fritos Scoops: Their salty corn flavor pairs wonderfully with this dip.
Pita Chips: A crunchy alternative for dipping.
Fresh Vegetables: Serve with bell peppers, carrots, celery, and cucumber slices.
Crackers: Buttery crackers make a tasty combination.
Toasted Baguette Slices: Great for serving at parties.
You can also serve this dip alongside grilled chicken, steak, tacos, burgers, or barbecue. It makes a wonderful side dish for summer cookouts!
Make It Your Own!
One of the things I love about recipes like this is how easy they are to customize.
Want to make it extra hearty? Add cooked and crumbled bacon or diced grilled chicken.
Love spicy food? Add chopped jalapeños, cayenne pepper, or a few splashes of hot sauce.
Want more cheese? Add extra shredded cheddar, Monterey Jack, or pepper jack.
You can even turn this dip into a loaded Mexican corn casserole by adding everything to a baking dish and topping it with extra cheese before baking.
Can You Make This Dip Ahead of Time?
Absolutely! This is a wonderful recipe to prepare ahead of time.
You can mix all the ingredients together, cover the dish, and refrigerate it for up to 24 hours before serving. When you are ready, bake it at 350°F until hot and bubbly. If baking directly from the refrigerator, allow a little extra cooking time.
Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Reheat thoroughly before serving.
