Ingredients:

  • For the Caramelized Onions:
    • 1 large yellow onion, thinly sliced
    • 1 tablespoon olive oil
    • ½ tablespoon butter
    • Pinch of salt and pepper
  • For the Burgers:
    • 1 ½ lbs ground beef (80/20 Chuck recommended)
    • 1 teaspoon garlic powder
    • ½ teaspoon onion powder
    • Salt and freshly ground black pepper to taste
    • 4 slices Swiss cheese
    • 4 burger buns (brioche or potato buns work well)
    • Optional toppings: lettuce, tomato, pickles, Dijon mustard, mayonnaise

Instructions:

1.  Caramelize Onions (Start First!): Heat olive oil and butter in a large skillet over medium-low heat. Add the sliced onions, salt, and pepper. Cook slowly, stirring occasionally, for 25-35 minutes, or until the onions are deeply golden brown and very soft. This takes patience but is worth it! Set aside.

2.  Prepare Burger Patties: Gently divide the ground beef into 4 equal portions. Form each portion into a ½-inch thick patty, making a slight indentation in the center of each with your thumb (this helps prevent them from bulging). Season both sides generously with garlic powder, onion powder, salt, and pepper.

3.  Cook Burgers: Preheat your grill or a cast-iron skillet to medium-high heat. Cook the patties for 3-5 minutes per side for medium-rare, or adjust to your desired doneness.

4.  Melt Cheese: During the last minute of cooking, place a slice of Swiss cheese on top of each patty. If grilling, close the lid to help the cheese melt. If using a skillet, you can cover the skillet with a lid or dome.

5.  Toast Buns: While the cheese melts, lightly butter or oil the cut sides of the burger buns and toast them on the grill or in a separate pan until golden.

6.  Assemble: Place a cheesy patty on the bottom half of each toasted bun. Top generously with the caramelized onions. Add any other desired toppings like lettuce, tomato, or a spread of Dijon mustard or mayonnaise. Place the top bun and serve immediately.
