There are some dishes that just feel like a hug. For me, that dish is lasagna. The smell of slow-simmering sauce, the sight of golden-brown cheese bubbling in the oven, the joy of slicing through tender layers of pasta... it’s pure, nostalgic comfort.
But
who says comfort food can't be packed with vegetables?
Today,
I’m thrilled to share our family-favorite Veggie Lasagna recipe. This isn't
just a "vegetarian option." It is a show-stopping main course that
will satisfy everyone at the table—meat-lovers included.
We’ve
found the perfect formula: a savory, robust red sauce loaded with colorful,
roasted vegetables, layered with creamy ricotta cheese, tender pasta, and
finished with a blanket of molten mozzarella and sharp Parmesan.
What
Makes This Veggie Lasagna Special?
The
secret is in the prep. We don't just throw raw vegetables in the pan. We dice
them small and sauté them until they are slightly caramelized. This process
does two things: it unlocks their natural sweetness and removes excess
moisture, ensuring your lasagna is full of flavor, not watery.
We
use a classic combination—carrots, celery, onions, bell peppers, zucchini, and
mushrooms—but you can easily swap in your favorites (spinach or eggplant are
fantastic!).

Recipe: Classic Vegetable Lasagna

Ingredients
For
the Vegetable-Marinara Sauce:
- 1 tbsp olive oil
- 1 large yellow
onion, diced small
- 2 carrots, peeled
and diced small
- 2 celery stalks,
diced small
- 8 oz (227g)
cremini mushrooms, wiped clean and chopped small
- 1 red bell pepper,
diced small
- 1 medium zucchini,
diced small
- 2 cloves garlic,
minced
- 2 (28-oz) cans
crushed tomatoes (we love San Marzano style)
- 1 tsp dried
oregano
- ½ tsp dried thyme
- Salt and black
pepper to taste
For
the Lasagna Layers:
- 12–15 lasagna
sheets (no-boil or regular, cooked according to package)
- 1 (15-oz)
container ricotta cheese
- 1 large egg,
lightly beaten
- 1 cup (100g)
finely grated Parmesan cheese, divided
- ¼ cup fresh
parsley, chopped, plus more for garnish
- 3 cups (300g)
shredded mozzarella cheese
Instructions
1.
Sauté the Vegetables:
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced
onion, carrots, and celery. Sauté for 5-7 minutes, until softened. Add the
mushrooms, bell pepper, and zucchini. Cook for another 8-10 minutes, stirring
occasionally, until the vegetables are tender and their liquid has cooked off.
2.
Simmer the Sauce:
Stir in the minced garlic and cook for 1 minute until fragrant. Add the two
cans of crushed tomatoes, dried oregano, dried thyme, salt, and pepper. Bring
the sauce to a gentle simmer, cover, and let it cook for at least 15 minutes
(while you prepare the other components) to allow the flavors to meld.

Prepare the Ricotta & Cheese: In a medium bowl, whisk together the ricotta
cheese, beaten egg, ½ cup of the grated Parmesan cheese, and chopped parsley. Season
with a pinch of salt and pepper. Place your shredded mozzarella and the
remaining ½ cup of Parmesan in separate bowls for easy assembly.
4.
Assemble the Lasagna:
Preheat your oven to 370°F (188°C).
- Spread about ½ cup
of the veggie-marinara sauce onto the bottom of a 9x13 inch casserole dish
to prevent sticking.
- Layer 1: Lay 3-4 lasagna
sheets to cover the bottom. Spread ⅓ of the ricotta mixture evenly over
the pasta. Top with ⅓ of the remaining veggie sauce, followed by 1 cup of
the shredded mozzarella.
- Layer 2 & 3: Repeat the
sequence two more times: Pasta, ⅓ Ricotta, ⅓ Sauce, 1 cup Mozzarella.
- Top: For the final top
layer, use your remaining pasta sheets, cover them with the last of the
veggie-marinara sauce (ensuring the pasta edges are well covered), and
finish with the last of the mozzarella and the remaining ½ cup of grated
Parmesan.
5.
Bake:
Cover the dish tightly with aluminum foil. Bake for 25 minutes. Carefully
remove the foil and continue baking for another 20–25 minutes, or until the
cheese is molten, golden brown, and bubbling wildly at the edges.
6.
Rest & Serve:
This is the most important step! Remove the lasagna from the oven and let it
rest for at least 15-20 minutes before slicing. This allows the layers to
set, guaranteeing clean, perfect slices. Garnish with fresh parsley before
serving.
