There is something special about discovering a food that is simple, wholesome, and full of flavor—and that is exactly how I felt when I discovered Norwegian Baked LLC from Brooklyn, New York.
Norwegian Baked takes a traditional Norwegian staple called Knekkebrød, or Norwegian crispbread, and brings it to American tables with a wonderful combination of traditional recipes, organic ingredients, whole grains, seeds, and creative flavors.
What I really love about crispbread like this is that it isn't just another cracker. It has a heartier texture, plenty of crunch, and enough flavor to stand on its own while also giving you a delicious base for toppings. Rosemary & Lemon Chicken Salad Crispbread Bites
Since the Rosemary & Lemon Crispbread has such a fresh, herbal flavor, I wanted to create a recipe that would let that flavor shine.
This recipe is easy enough for lunch but pretty enough to serve as an appetizer.
Ingredients
1 package of Norwegian Baked Rosemary & Lemon Crispbread
2 cups cooked chicken, shredded or chopped
1/3 cup mayonnaise
2 tablespoons Greek yogurt
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 teaspoon honey
1 tablespoon finely chopped fresh parsley
1/4 teaspoon garlic powder
Salt and black pepper, to taste
1/3 cup finely chopped celery
2 tablespoons finely chopped red onion
Fresh rosemary, optional, for garnish
Thin lemon slices, optional
Directions
In a medium bowl, combine the mayonnaise, Greek yogurt, lemon juice, lemon zest, honey, parsley, and garlic powder.
Add the chopped chicken, celery, and red onion.
Stir everything together until the chicken is nicely coated.
