Funky's Hot Sauce Factory: Big Flavor, Creative Heat, and a Whole Lot of Funk




If you are someone who believes hot sauce should do more than simply make your mouth burn, then I have a company you are going to want to know about!

Today on Momz Daily Scoops, I am taking a trip into the flavorful world of Funky's Hot Sauce Factory. This is a company that takes hot sauce seriously—but not so seriously that they forget to have fun with it!

What really caught my attention about Funky's is that their philosophy isn't simply about making sauces that are extremely hot. Their goal is to create sauces that are flavorful, balanced, interesting, and packed with personality, with the heat working alongside the other ingredients rather than taking over the entire experience.

And with names like Terra Luna, Peach Fuzz, Mars Mist, Seeing Stars, Stellar Fuzz, Liquid Sunshine, Dark Star, Chili Librae, and Space Madness, you can already tell there is something creative happening here!

The Story Behind Funky's Hot Sauce Factory




Funky's Hot Sauce Factory is owned by Matthew Mini, who is also known as "Funky."

According to a PBS profile of the company, Matthew started making hot sauce as a hobby in the early 2000s while growing peppers in Northern California. He made sauces for friends and family and put fun labels on the bottles. The Funky's name came from his time playing in a band—his bandmates had nicknamed him Funky because of the way he played guitar.

What began as a hobby eventually became a business. After being laid off from a job in Whatcom County in 2018, Matthew decided to pursue the hot sauce business more seriously. Funky's began selling its sauces publicly in 2019, and the company later became part of the Bellingham Farmers Market community.

Today, Funky's Hot Sauce Factory is based in Bellingham, Washington, in Whatcom County.

Flavor Comes First

One of my favorite things about The Funky's Story is the emphasis on flavor.

Matthew has explained that his favorite sauces aren't simply hot—they are flavorful and well balanced, and they should complement the food being served.

The company also focuses on using local ingredients whenever possible. Their sauces can feature locally grown peppers and other ingredients such as lemongrass, ground cherries, coffee, and fruit.

Funky's also describes its sauces as being 100% vegan, gluten-free, non-GMO, and mostly organic, with an emphasis on locally sourced and organic ingredients when available.




What Does Funky's Make?

There is a whole universe of Funky's sauces to explore.

Their current selection includes sauces such as Terra Luna, Seeing Stars, Stellar Fuzz, Liquid Sunshine, Chili Librae, Dark Star, Peach Fuzz, Mars Mist, Cherry Mars Mist, Space Madness, Acid Ball, Superfuzz, Ogre Battle, Late Harvest Terra Luna, Woozy Ranch, and other specialty or limited-batch sauces.

They also offer sauce variety packs, BBQ sauces, dip mixes, seasonings and dry rubs, and other products.

So whether you are looking for something mild, fruity, smoky, fermented, sweet, or seriously hot, there is plenty to explore.


Terra Luna




Let's start with Terra Luna, one of Funky's signature fermented green chili sauces.

Terra Luna is made from four green peppers: serrano, jalapeño, Anaheim, and poblano. The peppers are fermented, giving the sauce a more complex flavor and a pleasant tang. Garlic, onion, lime juice, vinegar, and sea salt round out the recipe.

The flavor is earthy, tangy, green, savory, and distinctly pepper-forward without simply being about heat.

Funky's describes Terra Luna as particularly good with Latin foods, vegetables, pizza, and breakfast foods. It has also won first place in the Jalapeño-Based Sauce category at the 2023 NYC Hot Sauce Expo.

What I Would Pair with Terra Luna

I think this sauce would be fantastic with:

  • Tacos

  • Breakfast burritos

  • Scrambled or fried eggs

  • Avocado toast

  • Pizza

  • Nachos

  • Grilled vegetables

  • Burrito bowls

  • Quesadillas

  • Grilled chicken

  • Roasted potatoes

One of my favorite ideas would be breakfast tacos with scrambled eggs, crispy potatoes, cheese, avocado, and a drizzle of Terra Luna.

Now that's a breakfast with some personality!


Peach Fuzz




Peach fuzz is one of those sauces that immediately makes me think about summer.

Funky's describes Peach Fuzz as a peach-chipotle-style sauce with a subtle ginger zing. It combines fresh peaches with chipotle peppers, habanero peppers, ginger, black garlic, smoked paprika, lime juice, and other ingredients. The peaches are sourced from Collins Family Orchards in Selah, Washington.

This sauce brings together several flavors at once.

You get the natural sweetness and fruitiness of peach, followed by smoky chipotle, pepper heat, ginger, and savory garlic notes.

The result is a sauce that can move between sweet, smoky, spicy, and savory.

Funky's specifically recommends Peach Fuzz with carnitas, crispy tofu, BBQ, macaroni and cheese, and even vanilla ice cream.

Yes—vanilla ice cream!

That may sound unusual, but sweet fruit and chile flavors can make a surprisingly fun dessert combination.

What I Would Pair with Peach Fuzz

Try it with:

  • Pulled pork

  • Pork chops

  • Pork tenderloin

  • Carnitas

  • Grilled chicken

  • BBQ ribs

  • Burgers

  • Crispy tofu

  • Macaroni and cheese

  • Grilled shrimp

  • Fish tacos

  • Roasted sweet potatoes

  • Vanilla ice cream

I especially love the idea of Peach Fuzz with pork. Pork has enough richness to stand up to the sweetness, smokiness, and heat of the sauce.


Mars Mist




Next up is Mars Mist, and this one takes your taste buds on a completely different trip.

Funky's describes Mars Mist as a sauce where the fruit and heat of the peppers are rounded out with sweet pineapple and anise-like notes from Thai basil.

This is such an interesting combination because pineapple brings tropical sweetness while Thai basil contributes an aromatic flavor that gives the sauce another dimension.

Mars Mist is particularly well suited to foods that already work with sweet, spicy, and savory flavors.

What I Would Pair with Mars Mist

Try it with:

  • Grilled chicken

  • BBQ chicken

  • Shrimp

  • Sushi

  • Stir-fry

  • Fried rice

  • Thai dishes

  • Asian-inspired noodles

  • Eggs

  • Pizza

  • Tacos

  • Grilled vegetables

I could see this being especially delicious on grilled shrimp tacos with cabbage, avocado, and a little lime.

The pineapple and Thai basil would give the tacos a bright, tropical twist.


Seeing Stars




Now we have to talk about Seeing Stars, because this is definitely one for serious heat lovers.

Seeing Stars combines Carolina Reaper peppers with plums and umeboshi plum vinegar. The fruit is used to bring out the naturally deep, fruity character of the Reaper peppers.

And this isn't just a sauce with a fun name.

Seeing Stars won 1st Place and Grand World Champion in the 2022 Screaming MiMi Carolina Reaper Sauce Division at the NYC Hot Sauce Expo. It has also received additional awards in subsequent competitions.

The combination of extremely hot Carolina Reapers with sweet-tart plum creates an interesting contrast.

You get the fruitiness, followed by serious heat.

Funky's says Seeing Stars is extremely versatile and recommends it with pizza, eggs, and potato chips.

What I Would Pair with Seeing Stars

Because this is a seriously hot sauce, a little goes a long way.

Try it with:

  • Pizza

  • Eggs

  • Breakfast potatoes

  • Potato chips

  • Tacos

  • Burgers

  • Chili

  • Wings

  • Macaroni and cheese

  • Grilled meats

  • BBQ

  • Soups

I would also try just a tiny amount mixed into a creamy sauce or ranch dressing. The creamy base can help balance the heat while still allowing the fruity pepper flavor to come through.

And remember—Seeing Stars is an extremely hot sauce, so this is one where I would start with a very small amount and work my way up.


Peach Fuzz Sweet & Spicy Glazed Chicken




Since Peach Fuzz has that wonderful combination of peach, smoky chipotle, ginger, and chile heat, I wanted to create a recipe that really showcases those flavors.

This recipe turns peach fuzz into a sweet-and-spicy glaze for chicken.

Ingredients

  • 4 boneless, skinless chicken breasts

  • ½ cup Peach Fuzz Hot Sauce

  • 2 tablespoons honey

  • 1 tablespoon soy sauce

  • 1 tablespoon olive oil

  • 1 tablespoon fresh lime juice

  • 2 cloves garlic, minced

  • ½ teaspoon smoked paprika

  • ¼ teaspoon black pepper

  • 1 tablespoon butter

Optional Garnish

  • Fresh peach slices

  • Chopped green onions

  • Fresh cilantro

  • Lime wedges

Directions

1. Make the Peach Fuzz Glaze

In a bowl, combine the Peach Fuzz Hot Sauce, honey, soy sauce, olive oil, lime juice, garlic, smoked paprika, and black pepper.

Whisk everything together.

The honey helps balance the heat while adding a beautiful glossy finish to the chicken.

2. Marinate the Chicken

Place the chicken breasts in a shallow dish or resealable bag.

Pour about half of the Peach Fuzz mixture over the chicken and refrigerate for at least 30 minutes.

Reserve the other half for glazing.

3. Cook the Chicken

Heat a large skillet over medium heat.

Remove the chicken from the marinade and discard the used marinade.

Cook the chicken for approximately 5–7 minutes per side, depending on thickness, until it reaches 165°F internally.

You can also grill the chicken if you prefer.

4. Add the Peach Fuzz Glaze

During the final few minutes of cooking, brush the chicken generously with the reserved Peach Fuzz glaze.

Turn the chicken and brush again.

Continue cooking until the glaze becomes glossy and slightly caramelized.

Add the butter to the pan during the final minute and spoon the buttery glaze over the chicken.

5. Serve

Slice the chicken and place it on a serving platter.

Top with chopped green onions and cilantro and serve with lime wedges.

For an extra special presentation, add a few thin slices of fresh peach around the chicken.

What to Serve with Peach Fuzz Chicken

I would serve this chicken with:

  • Coconut rice

  • Grilled corn

  • Roasted sweet potatoes

  • Coleslaw

  • Grilled vegetables

  • Fresh peach salsa

  • A simple green salad

For me, coconut rice and grilled corn would be the perfect combination. The slightly sweet sides would complement the smoky, fruity heat of Peach Fuzz beautifully.

My Momz Daily Scoops Take

What I find so interesting about Funky's Hot Sauce Factory is that the sauces are not simply about seeing how much heat you can tolerate.

They are about flavor first.

Terra Luna gives you fermented green-chile flavor with a tangy, earthy character. Peach Fuzz combines peach, chipotle, ginger, and heat. Mars Mist takes you toward pineapple and Thai basil. And Seeing Stars takes fruit and Carolina Reaper peppers into seriously hot territory.

There is also something really fun about the names. Funky's sauces have personality before you even open the bottle!
