Homestyle Crockpot Pot Roast

Yields: 6-8 servings Prep time: 20 minutes Cook time: 6-8 hours on LOW or 3-4 hours on HIGH

Ingredients:

  • 3-4 pound beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3-4 carrots, peeled and cut into large chunks
  • 3-4 celery stalks, cut into large chunks
  • 1 ½ pounds small red or Yukon gold potatoes, halved or quartered
  • 1 (10.75 ounce) can condensed cream of mushroom soup (or cream of celery)
  • 1 (1 ounce) packet dry onion soup mix
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Equipment:

  • 6-quart (or larger) slow cooker
  • Large skillet (optional, for searing)

Instructions:

1.  Prep the Beef: Pat the beef chuck roast dry with paper towels. Season generously all over with salt and freshly ground black pepper.

2.  Sear the Beef (Optional but Recommended!): For extra flavor and a better crust, heat the olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until nicely browned, about 2-3 minutes per side. Transfer the seared roast to the bottom of your slow cooker. If you're short on time, you can skip this step.

3.  Layer the Vegetables: Arrange the chopped onion, carrots, celery, and potatoes around the beef roast in the slow cooker.

4.  Prepare the Sauce: In a medium bowl, whisk together the condensed cream of mushroom soup, dry onion soup mix, beef broth, Worcestershire sauce, and dried thyme until well combined.

5.  Pour & Cook: Pour the sauce mixture evenly over the beef and vegetables in the slow cooker.
