Ingredients:
- 3-4 pound beef
chuck roast
- 1 tablespoon
olive oil
- 1 large onion,
chopped
- 3-4 carrots,
peeled and cut into large chunks
- 3-4 celery
stalks, cut into large chunks
- 1 ½ pounds small
red or Yukon gold potatoes, halved or quartered
- 1 (10.75 ounce)
can condensed cream of mushroom soup (or cream of celery)
- 1 (1 ounce)
packet dry onion soup mix
- 1 cup beef broth
- 1 tablespoon
Worcestershire sauce
- 1 teaspoon dried
thyme
- Salt and freshly
ground black pepper to taste
- Fresh parsley,
chopped, for garnish (optional)
Equipment:
- 6-quart (or
larger) slow cooker
- Large skillet
(optional, for searing)
Instructions:
1.
Prep the Beef: Pat the beef chuck roast dry with paper
towels. Season generously all over with salt and freshly ground black pepper.

Sear the Beef (Optional but Recommended!): For extra flavor and
a better crust, heat the olive oil in a large skillet over medium-high heat.
Sear the beef roast on all sides until nicely browned, about 2-3 minutes per
