Turkey Pot Pie

 



 Turkey pot pie is a delicious and hearty way to use up leftover turkey. It is a great way to feed a crowd and is perfect for a cold winter day.

 

Ingredients

 

1 tablespoon olive oil

1 onion, chopped

2 cloves garlic, minced

1/2 cup carrots, chopped

1/2 cup celery, chopped

1/2 cup frozen peas

1/4 cup all-purpose flour

1 cup chicken broth

1 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups cooked turkey, shredded

Instructions

 

Preheat oven to 375 degrees F (190 degrees C).

Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, carrots, and celery and cook until softened, about 5 minutes.2

Stir in the flour and cook for 1 minute more.

Slowly whisk in the broth and milk until combined.

Bring to a simmer and cook until thickened about 5 minutes.

Stir in the turkey, peas, salt, and pepper.

Transfer the mixture to a 9x13-inch baking dish.

Top with the mashed potatoes.

Bake for 20-25 minutes, or until the potatoes are golden brown.

Tips

 

You can use any type of leftover turkey.

You can add other vegetables to the pot pie, such as corn, broccoli, or spinach.

You can also use store-bought mashed potatoes.

This dish can be made ahead of time and reheated.
