- 1 tablespoon oil
- 1 large onion, finely
chopped
- 1 inch ginger, grated or
finely minced
- 3-4 cloves garlic, minced
- 1 green chili, slit
(optional, for a little heat)
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- ½ teaspoon turmeric powder
- ½ teaspoon red chili powder
(adjust to taste)
- ½ teaspoon garam masala
- 1 (14.5 ounce) can diced
tomatoes, or 2 large fresh tomatoes, chopped
- ½ cup cashews, soaked in
warm water for 15 minutes (for creaminess)
- 1 cup water (or vegetable
broth)
- ½ teaspoon sugar (optional,
balances acidity)
- ¼ cup heavy cream (or cashew
cream for dairy-free)

leaves (kasoori methi), crushed between palms
