Ingredients
You'll Need:
- For the Meat
Filling:
- 1 tablespoon
olive oil
- 1 large yellow
onion, chopped
- 2 carrots,
peeled and diced
- 2 celery
stalks, diced
- 2 cloves
garlic, minced
- 1.5 lbs ground
beef or lamb (or a mix)
- 1 teaspoon
dried thyme
- 1/2 teaspoon
dried rosemary
- Salt and
freshly ground black pepper to taste
- 2 tablespoons
all-purpose flour
- 1 cup beef
broth
- 1/2 cup red
wine (optional, but adds depth)
- 1 tablespoon
Worcestershire sauce
- 1 cup frozen
peas
- 1 cup frozen
corn
- For the Mashed
Potato Topping:
- 2 lbs russet
potatoes, peeled and quartered
- 1/2 cup milk
(whole milk recommended)
- 1/4 cup
unsalted butter
- Salt and
freshly ground black pepper to taste
- 1 egg yolk (for
extra richness and a golden crust)
- For the
Spiderweb & Garnish:
- 2-3 tablespoons
sour cream or mayonnaise
- Black gel food
coloring (optional, for a darker web)
- Plastic spider
or a spider made from olives for garnish (optional)
Instructions:
1.
Prepare the Mashed Potato Topping:
- Place the peeled
and quartered potatoes in a large pot and cover with cold, salted water.
Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until
fork-tender.
- Drain the
potatoes thoroughly. Return them to the hot pot and mash them until
smooth.
- Add the milk,
butter, salt, pepper, and egg yolk. Mix well until creamy and smooth.
Taste and adjust seasoning.
- Spoon about 1/4
cup of the mashed potatoes into a small bowl. Cover both the main batch
and the small bowl of potatoes and set aside.
2.
Make the Meat Filling:
- Preheat your
oven to 375°F (190°C).
- Heat olive oil
in a large oven-safe skillet (like a cast iron) or a Dutch oven over
medium heat. Add the chopped onion, carrots, and celery. Cook, stirring
occasionally, for 5-7 minutes until softened.
- Add the minced
garlic and cook for another minute until fragrant.
- Add the ground
beef/lamb to the skillet. Break it up with a spoon and cook until browned,
about 8-10 minutes. Drain any excess fat.
- Stir in the
dried thyme, rosemary, salt, and pepper. Cook for 1 minute.
- Sprinkle the
flour over the meat and vegetables. Stir well and cook for 1-2 minutes to
cook out the raw flour taste.
- Pour in the beef
broth and red wine (if using), and Worcestershire sauce. Bring to a
simmer, scraping up any browned bits from the bottom of the pan. Let it
simmer for 5 minutes until the sauce thickens slightly.
- Stir in the
frozen peas and corn. Remove from heat.
3.
Assemble the Spiderweb Shepherd's Pie:
- If your skillet
isn't oven-safe, transfer the meat filling to a 9x13 inch baking dish.
- Spoon the main
batch of mashed potatoes evenly over the meat filling.
- To create the
spiderweb:
- Take the small
bowl of reserved mashed potatoes. If desired, stir in a tiny drop of
black gel food coloring to make it grey for a more defined web
(optional).
- Transfer this
small amount of mashed potatoes to a piping bag fitted with a small round
tip, or a ziplock bag with a tiny corner snipped off.
- Pipe concentric
circles on top of the mashed potato layer, starting from the center and
working your way out.
- Use a toothpick
or the tip of a knife to drag lines from the center of the pie outwards,
creating the "spokes" of the spiderweb.
4.
Bake to Perfection:
- Place the pie in
the preheated oven and bake for 25-30 minutes, or until the filling is
bubbly and the potato topping is golden brown.
- For an extra
golden crust, you can briefly broil it for the last 1-2 minutes (watch
carefully to prevent burning!).
5.
Garnish and Serve:
- Carefully remove
the pie from the oven.
- For the ultimate
spooky effect, place a plastic spider or a homemade olive spider (slice a
black olive in half for the body, then thinly slice another for the legs)
on the center of your spiderweb.
- Let the pie rest
for 5-10 minutes before serving.
