Quick & Classic Scrambled Eggs with Ham

Yields: 2 servings Prep time: 5 minutes Cook time: 5-7 minutes

Ingredients:

  • 4 large eggs
  • 2 tablespoons milk or cream (optional, for extra fluffiness)
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 tablespoon butter or olive oil
  • ½ cup cooked ham, diced (leftover ham, deli ham, or ham steak works great)
  • Optional: 2 tablespoons shredded cheese (cheddar, Monterey Jack, or Swiss)
  • Optional garnish: fresh chives or parsley, chopped

Equipment:

  • Medium non-stick skillet
  • Whisk or fork
  • Spatula

Instructions:

1.  Prep the Eggs: In a medium bowl, whisk the eggs with milk/cream (if using), salt, and pepper until the yolks and whites are fully combined and slightly frothy. Don't over-whisk, just enough to break up the eggs.

2.  Heat the Pan: Melt the butter or heat the olive oil in a non-stick skillet over medium-low to medium heat. You want the pan warm enough to cook, but not so hot that it browns the eggs too quickly.

3.  Add Ham: Add the diced ham to the skillet and cook for 1-2 minutes, stirring occasionally, until it's slightly warmed and begins to crisp at the edges.
