Ingredients
For the Meatloaf
2 pounds ground beef
1 cup Italian breadcrumbs
2 large eggs
½ cup milk
½ cup grated Parmesan cheese
1 small onion, finely chopped
3 cloves garlic, minced
2 tablespoons Italian seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped fresh parsley
For the Cheese Filling
1½ cups shredded mozzarella cheese
½ cup shredded provolone cheese
¼ cup grated Parmesan cheese
For the Topping
1 cup marinara sauce
½ cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
1 teaspoon Italian seasoning
Directions
Preheat your oven to 375°F.
In a large mixing bowl, combine the ground beef, Italian breadcrumbs, eggs, milk, Parmesan cheese, chopped onion, minced garlic, Italian seasoning, garlic powder, onion powder, salt, black pepper, and parsley.
Mix everything together until well combined. Be careful not to overmix, as this can make your meatloaf tough.
Line a baking sheet with parchment paper or lightly grease a loaf pan.
Place about two-thirds of the meat mixture onto the prepared surface and shape it into a rectangle.
Spread the mozzarella, provolone, and Parmesan cheese down the center of the meat mixture, leaving space around the edges.
Carefully fold the sides of the meat mixture over the cheese and seal the edges. Add the remaining meat mixture to cover the top and ends, making sure the cheese is completely enclosed.
Shape into a loaf and place seam-side down.
Bake uncovered for approximately 45 minutes.
Remove the meatloaf from the oven and spread the marinara sauce over the top.
Sprinkle with mozzarella cheese, Parmesan cheese, and Italian seasoning.
Return to the oven and bake for another 15–20 minutes, or until the center reaches an internal temperature of 160°F.
Allow the meatloaf to rest for 10 minutes before slicing. This helps keep all those delicious juices and melted cheese inside.
Serve warm and enjoy!
What Makes This Italian Meatloaf So Special?
What I love about this recipe is that it takes a traditional comfort-food favorite and gives it an Italian twist.
The ground beef is seasoned with garlic, onion, Parmesan, parsley, and Italian herbs. The breadcrumbs and milk help keep the meatloaf moist and tender.
But the real star of the recipe is the cheese filling!
The mozzarella melts into a wonderful gooey center, while the provolone adds a little extra flavor. The marinara sauce on top brings everything together, and that final layer of melted cheese makes this meatloaf extra special.
It's almost like enjoying a delicious Italian meatball and lasagna combination all in one dish!
What Goes Great with Stuffed Italian Meatloaf?
There are so many wonderful sides that pair perfectly with this cheesy Italian meatloaf.
Here are some of my favorites:
Garlic Mashed Potatoes: Creamy potatoes are always a wonderful choice with homemade meatloaf.
Spaghetti with Marinara Sauce: Keep the Italian theme going with a side of pasta.
Garlic Bread: Perfect for soaking up any extra marinara sauce.
Roasted Parmesan Potatoes: Crispy potatoes with garlic and Parmesan make a delicious side.
Italian Green Beans: Add some garlic, olive oil, and Parmesan for extra flavor.
Caesar Salad: A fresh salad adds a nice balance to this hearty meal.
Roasted Zucchini: Tender zucchini with Italian seasoning and Parmesan is another great pairing.
Tips and Variations
There are plenty of ways to customize this recipe to make it your own.
Add Bacon: Wrap the meatloaf with bacon before baking for extra flavor.
Use Italian Sausage: Replace half the ground beef with mild Italian sausage for a richer Italian flavor.
Add Spinach: Mix cooked, well-drained spinach into the cheese filling.
Make It Spicy: Add crushed red pepper flakes to the meat mixture.
Change the Cheese: Try fontina, Monterey Jack, or sharp provolone.
Add Mushrooms: Sautéed mushrooms make a wonderful addition to the filling.
Storing Leftovers
If you happen to have leftovers, allow the meatloaf to cool and place it in an airtight container in the refrigerator for 3–4 days.
To reheat, place individual slices in a baking dish, cover with foil, and warm in a 325°F oven until heated through. You can add a little extra marinara sauce and mozzarella before reheating.
You can also freeze cooked slices in freezer-safe containers for up to 3 months for another easy dinner.
