Spicy Potato Skins

 


You can make these potatoes as a side dish, or a meal. Anyway you choose, they are delicious.

 

What you need:

4 small russet potatoes

Olive oil

Salt and black pepper to taste

1 cup 2% milk

2 Tbsp butter

12 cup shredded sharp Cheddar cheese, plus more for garnish

4 scallions, chopped, plus more for garnish

12 Tbsp minced chipotle pepper

14 cup sour cream

6 strips bacon, cooked and crumbled

Pickled jalapeƱos, optional

 

Preheat the oven to 400 degrees Fahrenheit.

Rub a little olive oil into the skins of the potatoes and lightly salt them.

Bake for 35 to 40 minutes, or until the potatoes are soft.

When the potatoes are cool enough to handle, cut them in half and carefully scoop out the warm meat into a basin (leave a thin layer of potato intact around the skin to help prevent it from tearing).

Stir in the milk, butter, cheese, and scallions with a wooden spoon until combined. Season with salt and pepper to taste.

Preheat the oven to broil.

Scoop the mashed potatoes into the hollowed-out potato halves with care. Place in the broiler for 3 to 5 minutes, or until the tops are golden and crispy.

Combine the chipotle and sour cream, then spoon a dollop on top of each cooked potato. Finish with crumbled bacon and jalapeƱos on top of each.

Teriyaki Scallops Wrapped in Bacon

 


This dish also has only a few ingredients, some of which you may not think work well together, but the delicacy of the scallops is the perfect protein to match with the complex flavor of the teriyaki, and let's be honest, what doesn't taste amazing wrapped in bacon? A excellent appetizer for gatherings, or a fantastic main course for dinner when combined with a zesty salad.

 

YOU WILL Want

8 big sea scallops

14 cup teriyaki sauce

4–8 bacon strips

 

Mix the scallops with enough teriyaki marinade to coat and refrigerate for 30 minutes.

Preheat the oven to broil. Wrap each scallop with just enough bacon to completely encircle it without overlapping (it's preferable to stretch the bacon pretty thin—it crisps up better that way).

To secure the bacon and scallop, insert a toothpick. Brush with extra teriyaki sauce and set in the oven 6" below the broiler.

Cook for 10 to 12 minutes, or until the scallops are firm and the bacon is cooked through.

Shrimp and Mango Summer Roll

 


The original summer roll, not to be mistaken with the deep-fried, fatty spring roll, is a wonderful illustration of how a few healthy, somewhat uninteresting components can be meticulously manipulated into something far better than the sum of their parts. The mix of shrimp, a fantastic lean protein, acidic sweet mango, and a few crispy strips of red pepper will make for some very fantastic eating! Once you've mastered the easy wrapping method, feel free to experiment with the filling to discover your favorite mix of taste.

 

1 Tbsp chunky peanut butter

1 Tbsp sugar

12  Tbsp fish sauce

12  Tbsp rice wine vinegar, plus more for the noodles

2 oz vermicelli or thin rice noodles 8 sheets of rice paper

12  lb cooked medium shrimp, each sliced in half

12  red bell pepper, thinly sliced

1 mango, peeled, pitted, and cut into thin strips

4 scallion greens, cut into thin strips

14 cup cilantro or mint leaves

 

1 tablespoon warm water, peanut butter, sugar, fish sauce, and vinegar To properly blend, stir everything together. Set aside the peanut sauce.

Noodles should be cooked according to package directions. To keep them from sticking, drain and toss with a few shakes of vinegar. Dip a sheet of rice paper for a few seconds in a basin of warm water, until soft and flexible. Place the paper on a cutting board and cut it. Top with noodles, 3 or 4 shrimp halves, bell pepper, mango, onion, and a few entire cilantro leaves, leaving a 12" gap at either end of the wrapper. Fold the rice paper ends toward the center, then roll tightly like a burrito. Rep with the last seven wraps.

If a piece of pizza and a quesadilla fell in love and had a child, the result would be this savory and sweet Italian quesadilla. Spread some of your leftover spaghetti sauce over a medium whole grain tortilla to create one at home. Top with mozzarella cheese and vegetables, fold in half, and pan-fry until golden brown and the cheese has melted.

Eggs in Purgatory





This recipe has protein, decent carbohydrates, and a touch of healthy fat, in addition to some tantalizing spicy, creamy, and salty tastes. In a small saucepan, heat 2 cups of pasta sauce (or 1 1/2 cups of sauce with 1/2 cup of water) with a clove of chopped garlic, red pepper flakes, salt, and black pepper to taste. 2 eggs, cracked, covered, and cooked until the whites set. Garnish with grated parmesan cheese and serve.

Simple Ratatouille

 


If your only experience with ratatouille is the movie about a rat who aspires to be a great cook, you're losing out. There's nothing not to love about this traditional, marinara-smothered meal, which is packed with vegetables and flavor. SautƩ garlic, sliced bell peppers, eggplant, onion, yellow squash, and zucchini in olive oil to cook it at home. To the pan, add one cup of sauce and 1/2 cup of water, along with some fresh basil. Allow the mixture to boil until the vegetables are soft before diving in.

Curt's BBQ sauce Review

 


Today I get to try some delicious BBQ sauce, sent over from, Curt's BBQ.




Curt's BBQ, started in 2007 and is a family run and owned business. Curt is the sauce specialist, and is the head of the perfect BBQ sauce recipe. The BBQ sauce is from, Hillsboro, ND, and now you can enjoy it on your kitchen table.




Now let me share with you the great recipes I made all from one large pork, and Curt's BBQ sauce.





First up was a breakfast bowl, and I took a chunk of my cooked pork, shredded it, and added it to the top of some scrabbled eggs, then over all of the dish, added some Curt's BBQ sauce "mild". The BBQ sauce has a nice mild taste to it, that really apeals to your palate. And serving it with my breakfast bowl, was a great choice over using ketchup. It is very delicious and I look forward to the rest of the day, using Curt's BBQ sauce.





Dinner was next, and I decided to use my pork and put them on some skewers and reheat the pork, covered in Curt's BBQ sauce hot. Even on reheated meat, the BBQ sauce was amazing. It has a nice balance of sweet and heat in every bite you take. If you like it hot, but not tear watering hot, this is a wonderful BBQ sauce for you.

Meatloaf

 


While there are a million different ways to prepare meatloaf, as long as you have 1/2 cup of spaghetti sauce in your fridge, you can create our simple go-to. Combine it with 2.5 pounds of lean, grass-fed ground beef, 1/2 cup seasoned dry breadcrumbs, 1 egg, and 1/4 cup chopped onion in a mixing dish. With your hands, combine all of the ingredients and shape into a loaf in a greased 8x8 baking dish. Top with a couple more generous spoonfuls of sauce and bake for an hour at 350°F, or until the center is no longer pink.

What could be better than pizza night? One that will help you use up any excess sauce.  English muffins, leftover bottled tomato sauce, chopped vegetables, and mozzarella cheese are all you need to make these adorable small vegetarian pizzas. After you've topped the muffins with whatever sauce you have left, put on the vegetables and cheese and bake for 10 minutes at 375°F. While the mini pizzas are baking, mix the remaining vegetables with some greens and dressing to make a substantial and nutritious side salad to go with them.

Stuffed Zucchini Boats




If you're searching for a no-fuss, healthful side dish to pair with your favorite Italian-inspired dinners, this is it. Begin by preheating the oven to 350°F and slicing four zucchinis in half lengthwise. Then, using a spoon, scrape out the seeds and spray both sides of the zucchini with extra virgin olive oil. Place on a baking sheet lined with foil and top with tomato sauce, diced tomato, grated Parmesan cheese, rosemary, thyme, salt and pepper to taste. Olive Tapenade

 


Do you have guests coming over for a night of fun? Impress them with a delectable tapenade that only appears to be difficult to create. To create it, put 1 cup spaghetti sauce, 1/2 cup chopped Kalamata olives, 1/2 cup chopped roasted peppers, and a tablespoon capers in a mixing bowl. Serve with carrots, celery, and crackers and garnished with chopped parsley. If you want to get fancy, combine the tapenade with some store-bought hummus and spread the mixture over slices of French bread. For a pop of color and a spicy taste, top each with some arugula.

If you have a love for fried pork skins, well I am going to introduce you to a healthier version, called, Snacklins. Snacklins is a very simple product that is made with yuca, mushrooms, and onions, that are not only crunchy, but one hundred percent vegan and plant based. A great replacement for those greasy pork rinds we are used to. You get the same look, but a much healthier taste. The calories in Snacklins are low, they are grain free, and even have a scoop shape to them that has a wonderful crisp. All three ingredients that, Snacklins use's are healthy on their on. The yuca is a great gluten free root veggie, that is so much more healthier than a potato. These Snacklins are great for dipping, dunking and scooping your favorite dips, even salsa's. And the best part with only 90 calories you can eat the whole bag. Which after one, you can't stop any way. And wait until the end, what I share with you, what I did with the last bag from Snacklins.




If you love a little spice, than, Chesapeake Bay Snacklins will fit the bill. The blend of spice on these plant based crisps are perfectly melded. And even with the spice added, you still have the main ingredients of yuca, mushroom and onion, which is the perfect snack, "Snacklins". And one other great component is that even as healthy as it is, it still taste great. And the scoop share, is wonderful when using it with your favorite dips, or salsa's, and it doesn't get soggy. The texture of Snacklins is so much better then other pork rinds, and when seasoned as this flavor is, is perfect.

For the Nacho flavor Snacklins, I crushed them, but not to fine, and coated a few chicken wings for dinner, and air fryed them. The nacho Snacklins held up, and gave my wings a nice crisp skin with a ton of flavor. After your first bite you will fall in love with these guilt free snacks. The taste is so yummy, cheddar cheese in a vegan non dairy way. How perfect! If you like a real cheddar cheese nacho taste, this flavor from Snacklins is for you. Air Fryer Baked Sweet Potato

 


 If you love sweet potatoes, you have to try this:

 

Ingredients:

3 sweet potatoes

1 tablespoon olive oil

1-2 teaspoons kosher salt

 

Requirements

Wash your sweet potatoes and poke air holes in them with a fork.

Sprinkle with the olive oil and salt, then massage evenly over the potatoes.

Once the potatoes have been coated, place them in the Air Fryer basket and set them in the machine.

Cook your potatoes for 35-40 minutes at 392°F, or until fork tender.

Jumbo's Sloppy Joe Sauce Review

 

Who doesn't love classic food, comfort food? Well today with two sauces from Jumbo's sloppy Joe sauce, I got to make a yummy dinner three ways.

 


Jumbo's sloppy Joe sauce comes from a fantastic flavor that was named "Jumbo Jim". It made its debut in the town of Mandan, ND. Adults and kids loved this classic sauce, and now it's available to everyone to enjoy.




It's a very versatile product, that you can use of course to make sloppy Joe's, but you can also make some butt kicking recipes, like wings, hotdogs, and so much more.




For me, I wanted to make sloppy Joe's, three ways, with different meats.





First up, some original sloppy Joe's, made with beef, and Jumbo's sloppy Joe's sauce. Everything you need to make some mouth watering sloppy Joe's is already done for you in the sauce. As the label says, it's a sloppy Joe sauce for everything. It has your onion, your peppers, your spices and your delicious sloppy Joe classic flavors. It's been so long sine I have ate one, it truly does bring back childhood memories. This handcrafted sloppy Joe sauce has remained the same for over 45 years. You will not believe after tasting the, Jumbo's sloppy Joe sauce everything, how much taste is in this jar. It just is a party on your palate. The sloppy Joe sauce is surely the pride of North Dakota.




The next sloppy Joe I made was with some turkey meat. And the taste and flavor was amazing. The flavor all came once again from the jar of, Jumbo's sloppy Joe sauce everything. You really can use this sauce on everything, and anything you create. It's so versatile, you can use it for your nacho meat, use it on wings, even on some disco fries. The ideas are all up to you.




The next idea I came up with was, buffalo chicken sloppy Joes, using Jumbo's sloppy Joe sauce everything with jalapenos. The heat level is perfect, no crying at all, just a well balance heat, paired perfectly with all the other ingredients. And it to is also very versatile. How about some fried fish strips buffalo style with, Jumbo's sloppy Joe jalapeno sauce. Not in the mood to cook it with a meat or poultry, how about as a dip! How ever you decide to cook with, Jumbo's sloppy Joe sauce, jalapeno, your mouth is going to have a party going on.




To go with all my sandwich's, I made a pot of homemade baked beans, and used a jar of the, Jumbo's sloppy Joe sauce everything, jalapeno, for all the flavor. Every bite you took, was so flavorful, and at the end a little kick from the jalapenos. And the kids were still able to eat the sauce. Every ingredient in the jar is a perfect meld. You don't even need to add onions for green peppers, Jumbo's has done all the work.





The texture of both Jumbo's sloppy Joe sauce is so perfectly crafted. Its not to thick, but a perfect creamy texture full of flavor. You can even taste the tomatoes used to craft this sauce. Instant Pot chipotle chicken tacos

 


With this Instant Pot chipotle chicken tacos recipe, you can amp up your Taco Tuesday, or any day!  This dish has tons of flavor and would make an excellent taco filling. On Weight Watchers, this recipe is only 4 Blue plan points per serving.

 

Let's cook

With the lid off the cooker, spritz the olive oil spray and heat to "Saute" until the cooker has heated up. Cook until the onion is transparent and the garlic is aromatic, about 5 minutes.

Season the chicken breasts with salt and pepper before placing them in the Instant Pot and browning them. Combine the chicken stock, chiles, brown sugar, cilantro, and lime juice in a mixing bowl. Set the pressure cooker to "Manual" and securely lock the lid. Cook for 8 minutes on HIGH pressure.

To relieve the pressure, do a rapid release. Remove the chicken breasts by opening the cover. Return the chicken to the cooker after shredding it.

 

Scoop out 1/2 cup of the chicken mixture and place it on a tortilla. Serve immediately with lettuce, tomato, and cheese, if preferred.

The Nutty Peanut Review

 


The Nutty Peanut company not only crafts small batched peanut butter products, but has a wonderful story to tell on their journey. You can read all about it on their website, it's very enjoyable, just as their products.




The driving force behind, The Nutty Peanut, is Michael Della Pia and Michael "Mick" Rivera, who started on the music scene in Central New Jersey, my home state. From there, they crafted from a idea, healthy small batch's of crafted nut butters, that have tasty flavors. A move to Florida would start kick a wonderful full time business, with peanut butter that is not only full of flavors but healthy to eat. Now, The Nutty Peanut, is available nationwide, to have as part of our pantry's.




Peanut butter isn't just about peanut butter and jelly sandwich's, it's about taking it and coming up with some delicious recipes. And today, with three flavors from, The Nutty Peanut, that's exactly what I did. And they all turned out fabulous tasting, getting all the flavor from one source, The Nutty Peanut, peanut butter products.





First up was breakfast, and for that I made a smoothie with oat and, The Nutty Peanut, espresso peanut butter. All the fantastic taste came from the jar.
