I received some yummy bars today, from MCT Company.

The next bar we all shared was the MCT caramel sea salt. Now who doesn't like this flavor. But most of the time, this flavor is in a product that is not really the best thing for you to eat. The bar gets its natural sweetness from monk fruit, which is a powerful antioxidant. This flavor is just so extraordinary, and mouth watering. A really divine flavor that will satisfy your craving for sweets.

Shrimp baked potato recipe

 


Your baked potato's don't have to be with just butter and sour cream. How about some shrimp? You heard right, shrimp. Get creative like I did and try these baked potato's, it’s a meal all by itself, that is truly filling and satisfying.

 

Start with six large Idaho Potato's.

 

Vegetable oil, for coating

1 stick (1/2 cup) butter, at room temperature

1 cup sour cream

Salt and ground black pepper

1 pound sautéed shrimp, peeled

8 ounces grated Cheddar, plus more for sprinkling

Paprika, for sprinkling

 

Pre-heat your oven to 350 degrees F. Cover with aluminum foil a baking sheet or pan.

 

Start by washing the potatoes, drying them and carefully poking them with a fork on the sides. Cover each potato with vegetable oil, put on the prepared baking sheet and cook for around 1 hour.

 

Take the potatoes from the oven and cut off the top third of each potato. Sauté the potato gently and place it in a large bowl. Place the butter in a bowl. Mix together on  high with a hand mixer, then apply the sour cream and salt and pepper to satisfy.

 

Chop the shrimp into big bits. Layer the shrimp and the cheese into the mixture. Kindly stuff the combination back into the potato shells, making sure you don't crack it. Pile the mixture to the top of the potato shells as far as you can. Sprinkle each potato with more cheese and some paprika.

 

Bake in the oven until browned, for 20 to 25 minutes.

Miners Mix Seasoning Review

 


Today I got the opportunity to cook lunch and dinner, using seasonings from Miners Mix.




Miners Mix is located in the Mother Lode region, where back in a day gold was discovered, January 24th, 1848 and by 1849. Their famous saying is, IF IT DIDN’T EXIST IN 1850, IT AIN’T IN HERE! The company is located in the foothills of the Sierra Nevada, in Central California.





What's great about Miners Mix seasonings is the way that they enhance your recipes. The ingredients are one hundred percent natural, and there is no preservatives, msg or artificial ingredients. The products have very little salt, and are made in small batch's to ensure quality and taste, with 45 years of experience behind the making. Just clean, natural ingredients, that will bring the flavor!





The first product from MinersMix was their seasoning blend, Wholly Chipotle. For this product I used it to coat my roasted cauliflower, and made cauliflower tacos. The seasoning blend not only gave my dish flavor but a stunning color as well. The roasted cauliflower just soaked the seasoning right in. The ingredients for the Wholly Chipotle is simple and all natural, it includes, Salt, Chipotle and other Chile Powders, Sugar, Granulated Garlic, Onion, Ground Black Pepper, Oregano, Thyme. The heat comes from chipotle and chili powders. It added a nice smoky flavor to the roasted cauliflower, with a hint of heat, that was pleasantly hot. You can taste that the seasoning blend comes from real spices, nothing fake at all. You can use it to coat your food, use it as a rub on some ribs, the product is very versatile. It not only flavors what you use it on, it enhances it. This is not just another seasoning blend, this is a true handcrafted seasoning, that has 45 years of experience in every bottle. It was the only seasoning for my tacos, and it was the star flavor profile. If you love spice, then you will love Miners Mix, wholly chipotle seasoning blend. And if you want to get bold, sprinkle it on some fruit, for a sweet and zesty taste.





For dinner I decided to use Miners Mix, roast and prime rib seasoning. With coating my pork tenderloin, it came out with the most succulent crust. The flavor seeped all the way down to the middle. Now you can use this on a beef roast, or a prime rib, but like all the products, this to is very versatile. The nice blend of seasoning has ingredients of, Garlic Granulated, Minced, Powdered, Kosher Salt, Granulated Onion, Sugar, Chile Powder, Black Pepper, rosemary, Celery Seed, Oregano, Thyme. This product is one of Miners Mix, newest additions. It was tested very well, and when you taste if on your dish, you will agree. The rub just gives the meat or poultry you use it on the most extraordinary crust. You can rub your food the day before, or the same day as I did and the results are the same. When your cooking your dish, the aroma that comes from the Miners Mix seasoning blend is mouth watering. How my pork tenderloin came out was just so succulent, with a nice crust all over. The use's for this seasoning blend is endless. This will be the only flavor you need for any dish. Everything you need is in the jar. And you can also sprinkle some of the Miners Mix, seasoning on scrambled eggs, for a very unique flavor profile.

Filled Cinnamon Apple Fritters

 



If you love apples, and if you love fritters, well this duo is going to blow your mind. A wonderful mouth watering fall recipe, anyone would love!

 

They are a great appetizer, or brunch dish, even a nice dessert served with ice cream.

 

Ingredients

 

2 cup self-rising flour

1/3 cup granulated sugar

1 Tbsp ground cinnamon

1/8 tsp nutmeg or allspice

1/8 tsp ground ginger

2 large eggs beaten

1/2 cup butter melted

3/4 cup whole buttermilk

1 tsp pure vanilla extract

2 medium-large golden delicious apples peeled, cored, small dice

Powdered sugar for dusting

 

Heat about 5 inches of vegetable oil to 350 ° F in a heavy bottomed pot.

Sift the flour, sugar, ground cinnamon , nutmeg or all-spice and ginger together in a medium-sized mixing bowl.

Add the melted butter, buttermilk, broken eggs and vanilla. Mix well.

 

Apply the apple diced and blend until uniformly spread.

Using a 2 oz ice cream scoop or a Tbsp to drop in the hot oil. Maintain oil temperatures between 350 ° F-360 ° F for better performance.

 

Fry in batches for about 3 minutes per side until golden. Turn around for more browning.

Use a slotted spoon to drain on a  paper towel lined with a cookie sheet.

Dust with powdered sugar and serve instantly.

 

Serve with ice cream or a dip.

Brix Chocolate Review

 


Now most of us think of drinking wine, may be with some cheese, but have you ever thought about drinking a glass of wine with chocolate?




Well today I got to do just that, and the chocolate came from a company called, Brix. A company out of Boardman, Ohio.




 

Dr. Nick Proia, an Ohio pulmonologist, created Brix after it became apparent to him that no chocolate on the market fit well with wine. After quite a lot of trial and error, Dr. Proia created four blends of what would later be called B r I x , the first chocolate explicitly formulated to complement wine. The source of Brix is a single origin Ghanaian Chocolate, known for its distinctive red fruit tones, blended with the finest quality chocolate confectionery.




The outcome is a mix that is so pure in taste that it genuinely improves the characteristics present in great wines, without confounding the palate. And the presentation of the chocolates are stunning.




The gift set I received was so elegant, one in a box that looked like a book, and the other filled with the fine and elegant Ghanaian Chocolate pieces, in four flavors.




If you don't know what Ghanaian Chocolate is, it has been made by a company in Japan since 1964, and also a Korean company since 1975. The name comes from the homage of the country Ghana. Ghana is one of the worlds largest exporters of cocoa beans.






The first item from Brix, was their collection gift set, that has four, 4oz bars of their chocolate inside. The box looks like a book, and then you open it to this elegant chocolate. On the inside lid, is the name of the chocolate, and what wine suggested for pairing. You get a bar of Milk chocolate which is suggested to drink with a glass of, Rose, Port, Sherry, Burgundy. The second bar is Smooth dark chocolate, with being paired with, Champagne, Riesling, Pinot Noir, Vintage Port. The third bar is medium dark chocolate, and is a great pairing to, Merlot, Shiraz, Zinfandel, Chianti, Rhone. And last is a extra dark chocolate, to be paired with, Cabernet Sauvignon, Bordeaux, Barolo, Malbec. The best way to try the chocolate, is to gather some of your family and or friends as I did and bring one bottle choice to pair with each chocolate flavor. It was a fun night to try the suggested wine, with the chocolate. The chocolate paired with the wine really does bring the tones of the wine out. It is a very high quality chocolate, that looks and tasty heavenly. The extra dark chocolate is a 70 percent, the medium is a 60 percent, the smooth dark is 54 percent and the mild is 46 percent. The chocolate from Brix, should be eaten slowly, and one piece at a time, taking a break between each piece. Just as you would do for wine tasting. This gives your palate time to savor the delectable taste of the pure cocoa chocolate. The way that the gift set is presented, is excellent, and ready for a loved one or friend to receive. Each bar in the box gift set, comes individually wrapped, and the lid when you open it gives you the complete wine and chocolate guide for tasting. On the back of each bar, the chocolate is identified. The chocolate is gluten free and kosher certified. Brix chocolate has been the winner of seven awards, and after tasting it with wine, you will understand why. It is a true, handcrafted gourmet confection, that is pure nectar upon your palate. You will truly love the enhancement not only of the chocolate but the wine as well when consumed together. And to do it with family and friends, it makes a very elegant evening.








The next box sent over from Brix, was the Brix bite assortment. They come individually packaged in one fourth ozs. There is a total, four of each flavor of chocolate. You get milk chocolate which you can pair with, Rose, Port, Sherry, Burgundy. Then again the smooth chocolate to pair with, Champagne, Riesling, Pinot Noir, Vintage Port. You have medium dark chocolate, that goes well with, Merlot, Shiraz, Zinfandel, Chianti, Rhone. And last you have the extra dark chocolate that you can pair with, Cabernet Sauvignon, Bordeaux, Barolo, Malbec. You will be so amazed at how well this chocolate was formulated to compliment your wine choice. The box is filled with ten pieces of each chocolate flavor, and makes it so easy to choose a piece to have with a glass of wine. Telling your friends to bring a bottle of wine over, for a wine tasting party, then surprising them with chocolate to go with that specific wine, is a fun party. Every one really enjoyed the chocolate from Brix, and was surprised how it did bring a different taste not only to the chocolate but to the wine. The best part is the chocolate is so luscious, you can enjoy it with or without the wine. The taste is very refined, and you can taste the time and effort it took to craft the chocolate.




No matter what chocolate piece you try from Brix, it will be smooth, and creamy, and just melts divinely on your tongue. It's a real velvet treasure! You will find that every piece goes well with any type of wine, its all up to your own palate's choice of taste. The chocolate is sweet but not overly so. The Brix chocolate is also great as a dessert. After dinner treat, with a nice glass of wine, and a piece of Brix chocolate to end your evening. Crock Pot Spicy Vegetable Beef Soup


 

Crock Pot Spicy Vegetable Beef Soup, that you will love anytime for lunch or dinner. Also if you have a instant pot you can cook the soup in that as well.

 

INGREDIENTS

1 pound ground chuck

1 medium onion, diced

1 (24-ounce) jar pasta sauce

1 can beef broth

1 cup water

1 (14.5-ounce) can diced tomatoes, undrained

1 (10-ounce) can Rotel tomatoes, undrained

2 tablespoons ketchup

2 russet potatoes, peeled and cut into chunks

1 package frozen mixed vegetables

2 teaspoons Worcestershire sauce

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon crushed red pepper flakes

1/2 teapsoon black pepper

 

If you prefer to not make it spicy, just leave out the red pepper flakes.

 

Cook the beef and the onion in a large nonstick bowl, crumble the beef as it heats. When beef is no longer pink, remove the fat and pass the beef / onion mixture to a 6-quart crock pot, or do the same process in your instant pot. 

Include the remaining ingredients and stir.

Cover and cook at LOW for 6 to 8 hours or at HIGH for 5 to 6 hours. Or cook according to your instant pot.

Today I got to try some bars from Grauka. I love animals so this company really tugged at my heart strings.

The first bar from Garuka, was the original. It's a nice and light, and has a nice crisp bite, with a chewy texture. The ingredients are simple and real, raw honey, peanut butter, brown rice crisps, cranberries. That's it. The bars are handmade in Vermont, and when you taste them, you taste pour craftsmanship. Even made with Vermont raw honey that is nectar to your lips. If your looking for a nice wholesome, healthy snack for your family, these bars fit the bill to the T. They have some serious energy packed inside them. Great for in between meals, or on the go. The bars are very tasteful and have a nice non gritty texture. You can also break them up and top some yogurt.




The other bar from Garuka Bar, was their endangered edition bar. This is a limited Garuka Bar, that is available online. It's a bar to say thank you for all your support. They have the same nice crisp chewy texture. And have a wonderful flavor to them. the flavor I got was the sun butter supper bar. Just a mouth watering bar.

My Lemon Pepper Chicken Wings

 


For football, for a appetizer, or for a snack, even dinner, you will love my recipe for these wings. They are lemon pepper wings, that you can serve with your favorite sauce for dipping. A real crowd pleaser, or family favorite!

 

Ingredients

 

2 lbs chicken wings

1/4 cup lemon juice

1 tsp Old Bay Seasoning

2 tsp garlic powder

2 tsp onion powder

2 tsp lemon pepper

1 1/2 cup all purpose flour

1 tsp dried parsley flakes

enough oil to deep fry in or cook in your air fryer according to the directions.

 

Apply the lemon juice over the chicken, and season with 1 tsp of Old Bay Seasoning, 1 tsp of garlic powder and 1 tsp of onion powder. Using your hands to toss the chicken to make sure it's properly seasoned with seasonings.

 

In a shallow container, add 1 1/2 cup of all-purpose flour, 1 tsp of garlic powder, 1 tsp of onion powder, 2 tsp of lemon pepper and 1 tsp of parsley. Using your hands or utensils to make sure the seasonings are properly through out the flour.

 

Cover the chicken wings with the flour.

Pour in the vegetable oil in your deep fryer or skillet. Heat the oil to 350-360 degrees F. Or cook in your air fryer according to the directions.

 

Drop the chicken in the hot oil and cook until it's crispy or in your air fryer.

Place the chicken on a paper towel lined with a baking sheet or plate for two minutes.

Serve it with your favorite dipping sauce. Or eat with out, either way its yummy!

Young Mountain Tea Review

 


Today I got to have a tea party with my daughters. And the tea I used was from the company, Young Mountain tea.




The founder of the company, Raj, was working in the picturesque Kumaon region of the Himalayas. Traveling through busses crammed with people and goats, he went across an empty village after an empty village, each surrounded by a fallow countryside and swept away the roads. He discovered that abandoned cities were the results of urban displacement, a issue experienced by villages across the Himalayas. The youth of the region moved to cities in search of job prospects, and the once-rich farmland steadily became fragile, causing landslides during the monsoons. This is a company to build healthy communities by exceptional tea. Their goal is to build a demand that rises emerging tea makers, building vibrant mountain economies and safe land across the Indian subcontinent. The first tea they I made for the girls and myself, was Young Mountain Tea, organic Nepali Green Pearl. The tea's come in a very pretty container, and to make them is very easy. You steep the tea, and serve when done, in about two and a half minutes. The taste is very sophisticated, and unique, with tones of smoked artichokes and lemons. The origin of the tea leaves come from Ilam, Eastern Neplai Himalayas, the maker is Tinjure Cooperative. This Tea from Young Mountain, is fresh, organic green tea rolled into tight pearls. They are handcrafted carefully to their shape, using heated pans. This helps to bring the range of aromas out and the flavors, when steeped. In fact you can use the pearls twice, and still have the same taste. The aromatics are that of a citrus bouquet, and it just fills the kitchen with such. It is a very sophisticated tea, that can be enjoyed any time of the day. Just a lovely tea that you will truly enjoy. The second tasting was, Young Mountain organic Kumaon black tea. The taste profile is that of caramel and cocoa that is bittersweet, and amazing. The origin where the tea comes from is Kumaon, North Indian Himalayas. And the tea makers are Champawat Village. The Kumaon black tea is just nectar to your lips, and your palate. The black tea is smooth, and very well balanced, with a caramel undertone. Then you get the taste of bittersweet cocoa. The black tea is a nice light pleasant flavor over all. Difficult to over steep, the fruity and bitter-chocolate undertones are accompanied by a lingering, creamy texture.




The last tea is that is from Young Mountain tea, is organic Kumaon white. A very flavorful tea with taste of melon and cucumbers, and then a after note of cinnamon. This was the first time all of us ever had this type of tea, and it will not be our last. The origin of the tea is Kumaon, North Indian Himalayas as well as the black. And from the same tea maker, Champawat Village. The tea is bright and very aromatic, with a extraordinary taste. The bush's that the tea is harvested from is over two hundred years old. The taste is clean and has lovely floral aromas.




Young Mountain tea, has a lovely website, that gives you a ton of information about their products. It goes into great detail, and is a very interesting read. All the products would make a great tea party, or just to have a cup and relax. They are all high quality, and should be tried. With every sip you take, you can savor the love and handcrafted work that went into the making of these tea's.
