The Tuckaway Tavern & Butchery Review

If you love a good steak, juicy burgers, flavorful chicken, and meats that are already seasoned and ready for the grill, The Tuckaway Tavern & Butchery is definitely a name worth knowing. Located at 58 Route 27 in Raymond, New Hampshire, The Tuckaway combines a restaurant, specialty butcher shop, and food market all in one destination.

The Butchery opened in 2012 as a specialty meat market, concentrating on quality beef and homemade marinades. A few months later, The Tavern opened next door, giving customers the opportunity to enjoy many of the same butcher-shop products prepared by the kitchen.

Chef Bobby "The Butcher" Marcotte is at the center of the concept. His approach is to start with fresh, quality ingredients and put a creative spin on familiar comfort foods. The result is a menu and butcher counter filled with steaks, burgers, marinated meats, sausages, chicken, pork, and plenty of other specialty foods.

One of the things that makes Tuckaway particularly interesting for home cooks is that you don't have to visit the restaurant to enjoy the meats. Their online shop currently features items such as marinated steak tips, chicken wings, Tavern Burgers, ground Angus beef, pork products, sausages, steaks, and assorted butcher boxes.

A Little About the Tuckaway Marinades

One of Tuckaway's biggest attractions is its marinated meats. Their house marinade is described as an elevated, mild Italian-style blend featuring lemon oil, garlic, onion, paprika, and other seasonings. Their Fat Boy marinade takes things in a sweeter direction with molasses, brown sugar, corn syrup, apple cider vinegar, garlic, ginger, and a hint of soy.

The steak tips have become one of the company's signature products. Tuckaway has offered several varieties, including House, Teriyaki, Maple Bourbon, Fat Boy, and other specialty marinades.

And that variety is what makes the butcher counter so much fun—you can prepare essentially the same cut of meat in completely different ways simply by choosing another marinade.

The Meats I Tried

Now let's get to the fun part—the meats!

The following selection gives you a nice tour through several different flavors, from sweet and savory steak tips to seasoned wings and hearty burgers.

Island Teriyaki Steak Tips

The Island Teriyaki Steak Tips are the kind of meat that can turn an ordinary backyard barbecue into something special.

The flavor profile is sweet, savory, and distinctly teriyaki-inspired. You get that combination of rich beef flavor with a sweet, slightly salty glaze-like seasoning. Teriyaki is particularly good with beef because the sweetness balances the savory richness of the steak.

The texture is one of the biggest attractions with steak tips. When cooked properly over high heat, the outside develops a beautifully browned exterior while the inside stays tender and juicy. Tuckaway's teriyaki steak tips have also received positive comments from customers who describe them as flavorful and tender.

What I'd Pair With Them

For sides, I would go with

  • Hawaiian-style rice
  • Grilled pineapple
  • Teriyaki vegetables
  • Sesame green beans
  • Asian-inspired coleslaw
  • Fried rice
  • Grilled zucchini
  • Sweet potato fries

My favorite combination: island teriyaki steak tips + pineapple fried rice + grilled pineapple.

The sweetness of the pineapple works beautifully with the savory teriyaki beef.

Chinese Pork

The Chinese pork is a completely different direction from the steak tips and is a great choice when you're looking for something with Asian-inspired flavor.

This is a boneless pork option, and Chinese-style seasoning gives the pork a savory, slightly sweet character that works especially well with rice and vegetables. Tuckaway's butcher offerings have included boneless Chinese pork, and customers have specifically mentioned purchasing it as one of their take-home meats.

The pork has a hearty but tender texture when cooked correctly. Pork can become dry if overcooked, so I recommend keeping an eye on the internal temperature and allowing the meat to rest before slicing.

What I'd Pair With It

Try serving Chinese pork with:

  • Vegetable fried rice
  • Steamed jasmine rice
  • Stir-fried vegetables
  • Sesame broccoli
  • Asian cucumber salad
  • Egg rolls
  • Fried rice
  • Lo mein noodles

For a complete dinner, I'd choose Chinese pork + vegetable fried rice + steamed broccoli.

And because the pork already has plenty of flavor, the sides don't need to be complicated.

House Steak Tips

If there is one meat that really represents what Tuckaway is known for, it's the house steak tips.

Tuckaway's own materials describe its marinated steak tips as award-winning, and the house marinade is one of the company's most popular.

The house marinade is savory rather than overly sweet. Garlic, onion, paprika, lemon oil, and other seasonings give the beef a bold flavor without completely covering up the taste of the meat.

The texture is exactly what you want from a good steak tip—meaty, juicy, and tender when cooked properly.

In fact, customer reviews have specifically praised the House Tips for being extremely tender, with one reviewer describing them as "melt in your mouth" tender.

What I'd Pair With Them

This is where you can go classic:

  • Creamy macaroni and cheese
  • Baked beans
  • Garlic mashed potatoes
  • French fries
  • Coleslaw
  • Grilled corn
  • Roasted vegetables
  • Onion rings

Tuckaway's own menu has featured steak tips alongside hearty sides such as mac and cheese, baked beans, fries, coleslaw, and potatoes.

My pick: house steak tips + creamy mac and cheese + baked beans.

That's a serious comfort-food dinner!

House Chicken Wings

The House Chicken Wings are perfect for game day, family gatherings, cookouts, or simply a casual dinner.

Tuckaway offers marinated wings in several varieties, including House, Buffalo, Cajun, BBQ, and Jerk.

The House version is the one I'd reach for when I want the chicken itself to be the star. The seasoning gives the wings savory flavor without the heat of a Buffalo or Cajun preparation.

The texture you want here is juicy chicken with nicely browned, slightly crisp edges.

What I'd Pair With Them

House wings are incredibly versatile. Try:

  • French fries
  • Sweet potato fries
  • Mac and cheese
  • Coleslaw
  • Potato salad
  • Corn on the cob
  • Celery and carrots
  • Ranch or blue cheese dressing

For a party platter, I'd serve them with crispy fries, creamy coleslaw, celery sticks, and ranch dressing.

Cajun Wings

If you like a little heat, Cajun wings are the way to go.

Cajun seasoning brings a completely different personality to chicken. Instead of the sweeter flavors found in teriyaki, Cajun seasoning brings savory spices, peppery heat, garlic, herbs, and a wonderful smoky-spiced character.

The flavor is bold enough that these wings don't need much else.

The texture should be juicy inside with browned, crispy edges on the outside. That contrast between tender chicken and a flavorful crust is what makes a good wing so addictive.

What I'd Pair With Them

Because Cajun seasoning has some heat, I love pairing it with cooling sides:

  • Creamy coleslaw
  • Ranch dressing
  • Blue cheese dressing
  • Mac and cheese
  • Cornbread
  • Potato salad
  • French fries
  • Cajun-seasoned fries

Best combination: Cajun Wings + creamy coleslaw + cornbread.

The sweetness and creaminess of the coleslaw help balance the spice.

Tavern Burgers

Then we have the Tavern Burgers, which are exactly what you want when you're craving a classic, substantial burger.

The Tuckaway shop currently offers its OG Tavern Burgers, while the restaurant has long featured its fresh-ground burgers as one of its signature offerings.

The restaurant's burger menu has included the Tuckaway Tavern Burger with a choice of American, cheddar, or blue cheese, along with several more over-the-top burger creations.

What I like about a butcher-shop burger is that it doesn't need to be complicated. A good burger should have a rich beefy flavor, a juicy center, and enough texture to stand up to a toasted bun and toppings.

My Favorite Toppings

I'd keep the classic Tavern Burger simple:

Cheddar + crispy bacon + caramelized onions + lettuce + tomato + pickles.

Then add a little burger sauce.

And don't forget the fries!

  5. Heat a grill or skillet over medium-high heat.
  6. Cook the burgers until they reach your preferred doneness and a safe internal temperature for ground beef.
  7. During the final minute of cooking, place cheddar cheese on top and allow it to melt.
  8. Toast the hamburger buns.
  9. Spread burger sauce on the buns.
  10. Add lettuce, the burger, bacon, caramelized onions, tomato, and pickles.
  11. Place the top bun on and serve immediately.

The Perfect Sides

Serve these burgers with:

Crispy French fries + creamy coleslaw + a cold glass of lemonade.

You could also turn this into an incredible burger bar and let everyone choose their own toppings.

🥢 Recipe: Sweet & Savory Chinese Pork Rice Bowls

This recipe is designed around the flavor profile of Tuckaway's Chinese Pork and is perfect for turning the meat into a complete family dinner.

Ingredients

  • 1½–2 lbs Tuckaway Chinese Pork
  • 2 cups cooked jasmine rice
  • 1 cup broccoli florets

  • 1 tablespoon water

  2. Allow the pork to rest for several minutes before slicing.
  3. While the pork is cooking, prepare the jasmine rice.
  4. Steam or stir-fry the broccoli, peppers, carrots, and snap peas until tender-crisp.
  5. Combine the soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and water in a small saucepan.
  6. Warm over low heat for several minutes.
  7. Slice the pork into thin strips.
  8. Place rice into four bowls.
  9. Add the vegetables.
  10. Arrange the sliced Chinese pork over the rice.
  11. Drizzle lightly with the sauce.
  12. Sprinkle with sliced green onions and sesame seeds.

A Little Extra

For a spicy version, add a teaspoon of Sriracha or chili-garlic sauce to the sauce.

For a sweeter version, add another teaspoon of honey.

Why I Love the Tuckaway Butchery Concept

What makes The Tuckaway different isn't simply that they sell meat. It's the combination of a butcher shop and a restaurant.

The butchery allows customers to take home many of the same types of specialty meats that make the tavern popular. The restaurant, meanwhile, demonstrates what those products can become when prepared by a professional kitchen. The company describes the Tavern as a place where its butchery products can be showcased.

That makes the Tuckaway especially appealing to people who love cooking at home.

You can pick up marinated steak tips for the grill, burgers for a weekend cookout, wings for game day, or specialty pork and chicken products when you're looking for something different from the usual grocery-store selection.

Their current online shop also offers butcher boxes, steak-tip packages, burger packs, wings, steaks, ground beef, chicken, and other specialty products, making it possible to bring the Tuckaway experience home.

Final Thoughts

The Tuckaway Tavern & Butchery is a fun destination for anyone who appreciates quality meats, bold marinades, big burgers, and hearty comfort food.

The Island Teriyaki Steak Tips bring a sweet and savory flavor that's fantastic with rice and grilled pineapple. The Chinese pork makes a wonderful Asian-inspired dinner with vegetables and fried rice. The House Steak Tips are perfect for a classic steak-and-sides meal, while the House Chicken Wings offer a savory option for families and gatherings. If you're looking for more spice, the Cajun Wings bring the heat. And for burger night, the Tavern Burgers give you that satisfying, juicy butcher-shop burger experience.

What really stands out is the variety. Instead of buying plain meat and figuring out what to do with it, Tuckaway gives home cooks a head start with its specialty cuts and marinades.

For a meat lover, that's a pretty good thing to have in the freezer!

Instant Comfort: How to Make Healing Chicken Soup in the Instant Pot

There is nothing quite like a warm bowl of homemade chicken soup when you’re feeling under the weather, dealing with a chilly day, or simply craving something wholesome and deeply comforting. Traditionally, a great chicken soup requires hours of simmering on the stovetop to develop that rich, savory depth of flavor.

Enter the Instant Pot.

By harnessing the power of pressure cooking, your electric pressure cooker mimics hours of slow simmering in just a fraction of the time. The chicken becomes fall-apart tender, the broth infuses with aromatic herbs and vegetables, and you get restaurant-quality soup on a busy weeknight in under 30 minutes. Let’s make a batch!

Pure Comfort in a Bowl

Just look at that golden, steaming broth loaded with tender shredded chicken, carrots, celery, and fresh herbs. It is sunshine in a bowl.

The Secrets to Instant Pot Chicken Soup

Before we get to the recipe card, keep these quick tips in mind:

1.      Use Bone-In Chicken (Optional for Extra Flavor): While boneless chicken breasts or thighs work great for speed, using bone-in chicken thighs or a small split breast adds incredible collagen and depth to the broth as it cooks under pressure.

2.      Add Noodles or Rice at the End: If you are adding pasta or rice to your soup, avoid cooking them under high pressure for the full duration, or they will turn to mush. Cook them separately or add them during a quick post-pressure simmer!

The Recipe: Quick & Cozy Instant Pot Chicken Soup

Yields: 6 servings

Prep time: 15 minutes | Cook time: 10 minutes (+ pressure building/release time)

Ingredients

  • 1.5 lbs. boneless, skinless chicken breasts or thighs (or bone-in for richer flavor)
  • 2 tablespoons olive oil or butter
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and sliced into rounds
  • 3 stalks of celery, sliced
  • 3 cloves garlic, minced
  • 6 cups of high-quality chicken broth or stock
  • 2 sprigs of fresh rosemary and 3 sprigs of fresh thyme (or 1 tsp dried Italian seasoning)
  • 1 bay leaf
  • 1.5 cups egg noodles, ditalini, or cooked white rice (optional)
  • 2 tablespoons fresh lemon juice (brightens up the whole pot!)
  • Fresh parsley, chopped (for garnish)
  • Salt and freshly cracked black pepper to taste

Instructions

1.      Sauté the Aromatics: Turn your Instant Pot on to the Sauté function. Add olive oil or butter. Once hot, add the diced onion, carrots, and celery. Sauté for 5 to 6 minutes until the vegetables begin to soften and the onions become translucent. Add the minced garlic and cook for 1 more minute until fragrant.

2.      Deglaze and Add Liquids: Pour in a splash of the chicken broth to scrape up any delicious, browned bits stuck to the bottom of the inner pot (this prevents the dreaded "Burn" notice!). Pour in the remaining chicken broth.

3.      Add Chicken and Herbs: Season the chicken pieces with salt and pepper, then gently submerge them into the broth. Add the bay leaf, fresh thyme sprigs, and rosemary sprigs.

4.      Pressure Cook: Secure the Instant Pot lid and make sure the valve is set to Sealing. Press the Pressure Cook or Manual button and set it to High Pressure for 8 minutes (10 minutes if using bone-in chicken).

5.      Natural Release: When the cooking cycle finishes, let the pressure release naturally for 10 minutes, then carefully switch the valve to Venting to release any remaining pressure.

6.      Shred the Chicken: Remove the chicken pieces from the pot and transfer them to a cutting board or mixing bowl. Use two forks to shred the tender meat into bite-sized pieces. Discard the bay leaf and any remaining woody herb stems from the pot.

7.      Add Noodles (If using): If adding noodles, turn the Instant Pot back to the Sauté function, add your dry noodles, and boil gently in the hot broth for 5 to 7 minutes until tender.

8.      Finish and Serve: Stir the shredded chicken back into the pot. Turn off the heat and stir in the fresh lemon juice and chopped parsley. Taste and adjust salt and pepper as needed. Serve hot!

There you have a comforting, soul-soothing pot of chicken soup made effortlessly in the Instant Pot. What is your favorite accompaniment to chicken soup, like saltine crackers or crusty French bread? Let me know in the comments below!

Liquid Gold: The Sweet Benefits of Cooking with Honey, And a Recipe for Hot Honey Chicken

There is something ancient and magical about honey. Long before refined white sugar filled our pantry shelves, honey was humanity’s original sweetener—harvested by ancient civilizations and prized not just for its rich, floral flavor but also for its remarkable natural properties.

When we talk about cooking and baking with honey, we aren't just swapping out sugar; we are adding a whole new layer of depth, moisture, and complexity to our dishes.

Today, we are exploring why you should bring honey out of the tea mug and into your everyday cooking, followed by an absolute showstopper of a recipe: Crispy Hot Honey Chicken. Let’s dive in!

The Benefits of Cooking with Honey

If you’ve mostly used honey as a drizzle or a remedy for a scratchy throat, here is why you should start incorporating it into your hot pan and oven cooking:

1.      Natural Moisture Retention: Honey is a humectant, meaning it naturally attracts and retains moisture. When used in baking, marinades, or glazes, it keeps meats remarkably juicy and prevents baked goods from drying out.

2.     Superior Caramelization: Because honey contains natural fructose and glucose, it browns and caramelizes faster and deeper than refined sugar. This creates that irresistible sticky, glossy char on roasted vegetables, grilled meats, and pan-seared chicken.

3.    Complex Flavor Profiles: Unlike flat, one-note white sugar, honey carries the distinct flavor notes of the flowers the bees visited—ranging from light and clover-sweet to dark, robust, and molasses-like (think buckwheat or wildflower honey).

4.    Natural Synergy with Heat: Paired with acidity (like apple cider vinegar or lemon) and heat (like chili flakes or cayenne), honey becomes the ultimate balancing act, cutting through spice with floral sweetness.

The Recipe: Crispy Hot Honey Chicken Thighs

Yields: 4 servings

Prep time: 15 minutes | Cook time: 20 minutes

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs (or bone-in chicken thighs)
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and freshly cracked black pepper
  • 2 tablespoons olive oil or butter (for the pan)

For the Hot Honey Glaze:

  • cup pure honey
  • 1 to 2 tablespoons hot sauce (or 1 tsp crushed red pepper flakes, depending on how much heat you want)
  • 1 tablespoon apple cider vinegar (cuts the sweetness and adds brightness)
  • 1 tablespoon melted butter

Instructions

1.      Prep the Chicken: Pat the chicken thighs completely dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and smoked paprika.

2.     Dredge (Optional for extra crunch): Lightly dust the seasoned chicken thighs in all-purpose flour, shaking off any excess.

3.    Sear to Golden Perfection: Heat olive oil in a large skillet (cast iron works wonderfully!) over medium-high heat. Add the chicken thighs and sear for 5 to 7 minutes per side until golden brown, crispy, and cooked through (reaching an internal temperature of 165°F).

4.    Make the Hot Honey Glaze: While the chicken finishes cooking, whisk together the honey, hot sauce, apple cider vinegar, and melted butter in a small bowl until smooth.

5.    The Sticky Finish: Turn the heat down to low. Pour the hot honey glaze directly over the sizzling chicken in the skillet. Let it bubble and reduce for 1 to 2 minutes, spooning the glossy, spicy-sweet syrup continuously over the meat until the chicken is thoroughly coated and caramelized.

6.     Serve: Transfer to a warm plate and drizzle any remaining pan glaze right over the top. Serve alongside fluffy rice, roasted vegetables, or cornbread!

Honey transforms a good dish into an unforgettable one. What is your favorite way to use honey in the kitchen? Let me know in the comments below!

The Ultimate Comfort Food: Cheesy Baked Ziti with Tender Meatballs

If you are looking for a meal that instantly brings everyone running to the dinner table with big smiles, look no further than a pan of bubbling, golden-brown Baked Ziti with Meatballs.

There is an undeniable magic that happens when tubes of tender ziti pasta mingle with a rich, herbaceous marinara sauce, juicy homemade meatballs, and an absolute mountain of melted mozzarella and Parmesan cheese. It’s the ultimate crowd-pleasing casserole—the kind of cozy Italian American comfort food that makes any ordinary weeknight feel like a Sunday family dinner.

Best of all? It’s surprisingly easy to assemble, and it tastes even better the next day if you happen to have any leftovers. Let’s dive into how to make it!

Bubbling, Golden Perfection

Just look at that gorgeous casserole. Golden, bubbly cheese pulling apart to reveal layers of savory meatballs, sauce, and perfectly cooked pasta. It’s love at first bite.

The Secrets to the Best Baked Ziti

Before we get to the recipe card, keep these quick tips in mind for success:

1.      Undercook the Pasta: Boil your ziti about 2 minutes shorter than the package instructions (al dente). Because the pasta will continue cooking and absorbing sauce while baking in the oven, this ensures your ziti stays firm and never gets mushy.

2.      Mix Some Cheese Right In: Don’t just put cheese on top! Stirring a cup of ricotta or mozzarella directly into the warm pasta and sauce mixture creates an ultra-creamy interior texture throughout the entire dish.

The Recipe: Cheesy Baked Ziti with Meatballs

Yields: 6–8 servings

Prep time: 20 minutes | Cook time: 30 minutes

Ingredients

  • 1 lb (16 oz) ziti or penne pasta
  • 1 lb homemade or high-quality store-bought meatballs (cooked)
  • 3 cups marinara or tomato basil sauce
  • 15 oz (1 container) whole-milk ricotta cheese
  • 2 cups of shredded mozzarella cheese, divided
  • ½ cup freshly grated Parmesan cheese
  • 1 large egg (lightly beaten, to bind the ricotta mixture)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (plus extra for garnish)
  • Salt and freshly cracked black pepper to taste

Instructions

1.      Preheat and Prep: Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil or non-stick spray.

2.      Boil the Pasta: Bring a large pot of heavily salted water to a boil. Add the ziti and cook until al dente (firm to the bite). Drain well and set aside.

3.      Make the Ricotta Mixture: In a large mixing bowl, combine the ricotta cheese, beaten egg, minced garlic, chopped parsley, half of the Parmesan cheese, and a pinch of salt and pepper. Stir until smooth.

4.      Combine Pasta, Sauce, and Meatballs: Add the cooked ziti directly into the bowl with the ricotta mixture, stirring gently to coat the pasta. Pour in 2 cups of marinara sauce and half of the cooked meatballs, mixing thoroughly.

5.      Assemble the Casserole: Spread a thin layer of marinara sauce across the bottom of your prepared baking dish. Spoon half of the ziti mixture into the dish. Scatter the remaining meatballs over the pasta, then add the rest of the ziti. Pour the remaining marinara sauce evenly over the top.

6.      Cheese Layer: Generously cover the top with 2 cups of shredded mozzarella cheese and the remaining Parmesan cheese.

7.      Bake: Bake uncovered at 375°F for 25 to 30 minutes, or until the sauce is bubbling around the edges and the cheese on top is melted, golden, and slightly browned. (If you want extra bubbly browning, broil for the last 2 minutes!).

8.      Rest and Serve: Let the baked ziti rest for 10 minutes before serving—this helps the layers set so you can scoop out clean portions. Garnish with fresh parsley and enjoy!

There you have a hearty, soul-warming pan of baked ziti that is guaranteed to disappear fast. What is your favorite side to serve with pasta night, like garlic bread or a crisp Caesar salad? Let me know in the comments below!

Kailua Honey Product Review

Kailua Honey: A Taste of Hawaii in Every Spoonful

If you love discovering small-batch food companies and products that bring something a little different to the table, Kailua Honey is a company worth getting to know. Based in Kailua on the island of Oʻahu, this family business began with backyard beekeeping and has grown into a collection of Hawaiian honey, infused honeys, creamed honeys, macadamia nut honey butters, teas, and other island-inspired products.

Kailua Honey says its journey began in 2019, when beekeeping started as a hobby after the family noticed that their plants were not being properly pollinated. What began with a few backyard hives eventually developed into a passion for Hawaiian honey, bees, local agriculture, sustainability, and small-batch products. Today, the company works with honey from beekeepers across Hawaiʻi and creates many of its infused products in small batches in Kailua.

A Little About Kailua Honey

One of the things I really like about Kailua Honey is that the company isn't simply selling one type of honey. Their collection showcases how dramatically honey can change depending on the flowers and ingredients involved.

The company describes its raw Hawaiian honey as hive-to-jar honey that isn't diluted, pasteurized, sweetened with added sugar, or adulterated. The flavor can vary naturally depending on what is blooming and where the bees are foraging. Kailua Honey explains that bees can forage within a radius of up to about four miles from their hive, meaning the plants and flowers around them can have a noticeable influence on the finished honey.

Their collection includes raw Hawaiian honey varieties such as kiawe, lehua, macadamia, and wildflower, along with flavored and infused varieties including lilikoi, ginger-lemon, hibiscus, guava, pineapple, coconut, black garlic, turmeric ginger, cinnamon, cacao, and more. They also offer creamed honey varieties and their barrel-aged honey.

That variety makes Kailua Honey especially fun for anyone who enjoys experimenting in the kitchen.

What Does Hawaiian Honey Taste Like?

One of the best things about honey is that it doesn't have just one flavor.

A good raw Hawaiian honey can have floral, fruity, buttery, earthy, or even slightly spicy characteristics depending on the nectar sources. Kailua Honey notes that spring and summer honey tends to be more floral, while honey produced when bees visit Wilelaiki trees can develop a slightly spicy character.

The texture of raw honey is typically thick and silky, while some varieties may naturally crystallize over time. Creamed honey has an entirely different texture—smooth, spreadable, and almost frosting-like—which makes it especially enjoyable on toast, biscuits, pancakes, fruit, and desserts.

And then there are the infused varieties, where the natural sweetness of honey becomes the perfect base for other flavors.

Coconut Creamed Honey: Sweet, Smooth & Tropical

One of the products that immediately caught my attention is Coconut Creamed Honey.

Creamed honey is a wonderful alternative to traditional pourable honey because of its thick, velvety texture. Instead of running off your toast or pancakes, it sits beautifully on top and is easy to spread.

The coconut flavor brings a tropical character to the natural sweetness of honey. Rather than being just another sweetener, it becomes something you can enjoy almost like a spread.

The Texture

The texture is one of the most appealing parts of creamed honey.

Instead of the thin, syrupy consistency associated with regular honey, creamed honey is thick and smooth. It has a soft, creamy mouthfeel that makes it perfect for spreading.

Think of the texture somewhere between soft honey butter and a smooth dessert spread.

The Taste

The combination of honey and coconut creates a naturally tropical flavor. You get the familiar floral sweetness of honey followed by the mellow, creamy character of coconut.

It's especially delicious with foods that already pair well with coconut—bananas, pineapple, strawberries, chocolate, vanilla, oatmeal, pancakes, and baked goods.

And because it has such a spreadable consistency, you don't need much to add plenty of flavor.

SPECIAL FEATURE: Why I Love Coconut Creamed Honey

Coconut-creamed honey is the type of product that can turn an ordinary breakfast into something special.

Spread it over warm toast and let it soften slightly. Spoon it over pancakes or waffles. Add a little to oatmeal. Pair it with fresh berries. Or use it as an ingredient in baking.

But my favorite idea is using it in a dessert.

The combination of coconut and honey works beautifully with chocolate and bananas, so I created a simple dessert that allows the honey to be one of the stars.

Coconut Creamed Honey Chocolate Banana Parfaits

Serves: 4

Prep time: 15 minutes

Ingredients

  • 4 ripe bananas
  • 1 cup vanilla pudding
  • ½ cup whipped topping or whipped cream
  • ½ cup crushed graham crackers
  • ¼ cup chocolate chips or chocolate shavings
  • 4 tablespoons Kailua Honey Coconut Creamed Honey
  • ¼ cup toasted coconut flakes
  • 1 teaspoon vanilla extract

Directions

  1. Slice the bananas into thin rounds.
  2. Place the vanilla pudding in a bowl and gently fold in the vanilla extract.
  3. Spoon a layer of crushed graham crackers into the bottom of four dessert glasses.
  4. Add a layer of sliced bananas.
  5. Spoon vanilla pudding over the bananas.
  6. Add a small spoonful of coconut creamed honey.
  7. Repeat the layers until the glasses are nearly full.
  8. Top each parfait with whipped cream.
  9. Sprinkle with toasted coconut and chocolate shavings.
  10. Drizzle another small spoonful of coconut creamed honey over the top.
  11. Refrigerate for at least 30 minutes before serving.

My Serving Suggestion

For an extra tropical touch, add a few pieces of diced pineapple between the layers.

The creamy pudding, banana, coconut, and honey create a dessert that tastes like a little tropical vacation in a glass.

Barrel-Aged Bourbon Honey: A Completely Different Honey Experience

If Coconut Creamed Honey is the tropical, creamy side of Kailua Honey, Barrel-Aged Bourbon Honey is its rich and sophisticated side.

This is one of the most interesting products in the collection because it isn't simply honey with bourbon flavoring added to it.

Kailua Honey created this product in collaboration with Koʻolau Distillery. Raw Hawaiian honey is aged in bourbon barrels, allowing the honey to pick up characteristics from the wood, including smoky, oak, and vanilla notes. Importantly, Kailua Honey describes the finished honey as non-alcoholic.

The Flavor of Barrel-Aged Bourbon Honey

This isn't the bright, floral honey you might drizzle over your morning toast.

Barrel-aged bourbon honey has a deeper personality.

The natural sweetness of Hawaiian honey is complemented by oak, vanilla, and smoky bourbon-barrel notes. The result is a richer flavor that makes it particularly interesting for cooking.

Kailua Honey recommends using it in hot tea and coffee, over pancakes, biscuits, and cornbread, as well as on bread pudding and vanilla ice cream. The company also specifically recommends it as a barbecue glaze.

The Texture

The texture remains that of a thick, pourable honey, but the aging process gives it a particularly luxurious quality.

It coats a spoon beautifully and works extremely well as a finishing drizzle or glaze.

And that's where I think this honey really shines: savory cooking.

The sweetness of honey works beautifully with salty, smoky, and savory flavors. Add the oak and bourbon-barrel character, and you have a glaze that can make chicken, pork, or beef especially flavorful.

SPECIAL FEATURE: Barrel-Aged Bourbon Honey for Savory Cooking

What makes this honey so much fun is that you don't have to reserve it for dessert.

It can become part of a marinade, glaze, or finishing sauce.

I especially like the idea of using it with pork because pork naturally pairs well with sweet and smoky flavors.

Barrel-Aged Bourbon-Honey-Glazed Pork Tenderloin

Serves: 4–6
Prep time: 10 minutes
Cook time: about 25–35 minutes

Ingredients

  • 1½ pounds pork tenderloin
  • ¼ cup Kailua Honey Barrel-Aged Bourbon Honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh rosemary, chopped

Directions

  1. Preheat the oven to 400°F.
  2. Pat the pork tenderloin dry with paper towels.
  3. In a small bowl, combine the barrel-aged bourbon honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, smoked paprika, salt, pepper, and rosemary.
  4. Whisk until the mixture is smooth.
  5. Reserve about ¼ cup of the glaze for later.
  6. Brush the remaining glaze generously over the pork.
  7. Place the pork in a lightly greased baking dish or oven-safe skillet.
  8. Roast until the pork reaches 145°F internally.
  9. During the final several minutes of cooking, brush the reserved glaze over the pork.
  10. Remove from the oven and allow the tenderloin to rest for about 5–10 minutes.
  11. Slice and serve with the pan juices.

What to Serve With It

This pork would be fantastic with:

  • Roasted sweet potatoes
  • Garlic mashed potatoes
  • Roasted Brussels sprouts
  • Grilled pineapple
  • Rice pilaf
  • A simple green salad

For a Hawaiian-inspired meal, I'd serve the pork with grilled pineapple and coconut rice.

More Ways to Enjoy Kailua Honey

The beauty of this collection is that honey doesn't have to be limited to the breakfast table.

Depending on the variety, Kailua Honey products can be used for the following:

Breakfast: pancakes, waffles, oatmeal, toast, biscuits, and yogurt.

Desserts: ice cream, fruit, cakes, cookies, bread pudding, and parfaits.

Drinks: tea, coffee, and other beverages.

Savory dishes: marinades, sauces, and barbecue glazes.

Cheese boards: drizzle honey over soft cheeses, sharp cheddar, or creamy brie and add nuts and fruit.

Kailua Honey's current collection includes numerous infused varieties, including Lilikoi, Ginger-Lemon, Hibiscus, Guava, Pineapple, Coconut, Black Garlic, Turmeric Ginger, Ceylon Cinnamon, and Cacao, along with raw Hawaiian honey and other specialty products.

A Company Built Around Bees, Hawaii & Small Batches

What I find especially appealing about Kailua Honey is the story behind the jars.

This isn't a company that simply decided to put a Hawaiian name on a honey product. Its roots are in beekeeping, pollination, and a genuine appreciation for the land.

The company describes beekeeping as a labor of love and emphasizes community, sustainability, and natural ingredients. Its products are designed to showcase Hawaiian honey while incorporating local ingredients and island-inspired flavors.

The company's collaboration with Koʻolau Distillery is also a great example of Hawaiian businesses working together. The used bourbon barrels don't simply disappear after the honey is aged. Koʻolau Distillery uses the barrels to create a limited-edition honey bourbon, creating a creative connection between the two products.

Final Thoughts

Kailua Honey offers much more than a jar of something sweet.

The raw Hawaiian honeys give you an opportunity to taste the natural differences created by Hawaiian flowers and growing seasons. The infused honeys take that natural sweetness and pair it with flavors ranging from tropical fruit to spices. The creamed varieties provide a completely different texture, while the barrel-aged bourbon honey adds smoky oak and vanilla complexity.

For me, Coconut Creamed Honey is the one I'd reach for when I want something smooth, creamy, and tropical. It's perfect for breakfast and desserts and makes a beautiful ingredient in recipes.

Barrel-Aged Bourbon Honey, on the other hand, is the variety I'd reach for when cooking. Its deeper oak and smoky notes make it especially interesting as a glaze for pork, chicken, or barbecue.

Together, these two products show just how versatile honey can be.

From the backyard hives that helped inspire the company to the small-batch products being created today, Kailua Honey brings a little taste of Hawaiian craftsmanship to every spoonful.

One important note: Honey should never be given to children under one year old. Kailua Honey also includes this warning on its product information.
