Crunchy avocado fries are now my new beloved avocado recipe!
Juice of 1/2 lime
1 1/2 cups panko breadcrumbs
1 tablespoon chili powder
1 cup all-purpose flour
2 large eggs, lightly beaten
Cooking spray
Salt to taste
Set the oven to 400°F.
Remove the outer skin from avocados by slicing them lengthwise. To
keep the avocado slices' color and freshness, squeeze fresh lime juice over
them. Reserve.
Coat a large baking sheet with nonstick cooking spray. Reserve.
Combine the panko breadcrumbs, chili powder, and salt in a mixing bowl.
Submerge the avocado slices in flour, then in eggs, and finally in
panic breadcrumbs.
Place the breaded avocado
slices on the baking sheet that has been prepared. Apply with cooking spray (to
make them extra crispy) and season with salt.
Bake for about 20 minutes, or
until the outside is crispy and golden.
Serve it with your preferred dip and fresh lime wedges.
